Hoy os enseño cómo hacer una tortilla en salsa de pimientos que solo vais ha encontrar aquí. Porque tortillas guisadas o tortillas en salsa hay muchas y cada una tiene su encanto pero muchas de estas recetas se limitan a seguir la receta tradicional que aunque está muy rica y por algo a sobrevivido al paso del tiempo.
Bajo mi humilde opinión os diré que la receta clásica de esta tortilla necesita una vuelta de tuerca. Para ello le hice una salsa propia y distinta a la de siempre que se que os va encantar.
Tradicionalmente la tortilla en salsa era una receta de aprovechamiento. Resulta una forma ideal de reciclar la tortilla de patatas del dia anterior. Se consegue servir esta de forma distinta y aparte corregir el reseco que habría adquirido el trozo sobrante hasta el dia siguiente. Así de una sencilla tortilla española se conseguían 2 platos completamente diferentes añadiendo unos cuantos ingredientes más.
Ingredientes para 4 personas
- 5 patatas medianas
- 1 cebolla grande
- 6 huevos
- 50ml de leche
- 3 pimientos del piquillo (para la salsa)
- 1 cebolla (para la salsa)
- 200g tomate frito (para la salsa)
- 2 ajos (para la salsa)
- 1 cucharada de harina (para la salsa)
- 1 vaso de agua (para la salsa)
- 1/2 vaso de vino blanco (para la salsa)
- sal y aceite de oliva (para la salsa)
Cómo hacer Tortilla en Salsa
- Para comenzar a elaborar la tortilla de patatas en salsa de pimientos pelamos y cortamos las patatas. El corte tiene que ser fino y todas las láminas debe tener el mismo grosor, para que se cocinen de manera uniforme.
- Después pelamos y cortamos la cebolla en juliana gruesa, es importante que el corte no sea demasiado fino para que al cocinarla no se queme.
- Seguimos poniendo las patatas y la cebolla cortadas en un escurridor y las lavamos con abundante agua para eliminar el almidón de la patata.
- Calentando abundante aceite en una sartén, cuando el aceite esté ligeramente caliente freímos las patatas y la cebolla. Comenzaremos cocinando a fuego medio alto, después, cuando comiencen a dorarse las patatas bajamos el fuego y las terminamos de hacer a fuego lento, moviéndolas de vez en cuando para que no se quemen.
- Mientras se terminan de cocinar las patatas ponemos en un bol amplio los huevos, con la leche, sal al gusto y batimos hasta integrar todos los ingredientes. Un truco para acertar siempre con el punto de sal de la tortilla es añadir un pellizco de sal por cada huevo y otro por la leche.
- Una vez que las patatas estén doradas las sacamos del aceite y las escurrimos bien, después las añadimos al los huevos que hemos batido previamente y dejaremos reposar la mezcla durante un mínimo de 10 minutos.
- Una vez que la mezcla haya reposado vamos a poner dos o tres cucharadas del aceite que antes retiramos en una sartén antiadherente y calentamos a fuego medio/alto. Cuando el aceite esté ligeramente caliente añadimos la mezcla de la tortilla a la sartén.
- Cocinamos durante 5 minutos o hasta que la tortilla esté cuajada por un lado.
- Transcurrido este tiempo le damos la vuelta y cocinamos durante otros 5 minutos hasta que la tortilla esté igual de dorada por ambos lados. Es importante no cocinarla en exceso, ya que la vamos a terminar en la salsa.
- Para comenzar a elaborar la salsa de pimientos pelamos y cortamos la cebolla y los ajos. No es necesario picar mucho las verduras, ya que más tarde la vamos a triturar.
- En una cazuela agregamos un poco de aceite la ponemos a fuego medio, cuando el aceite esté caliente agregamos los ajos y los doramos ligeramente.
- De inmediato añadimos la cebolla y cocinamos hasta que ambos ingredientes estén bien pochados.
- Continuamos poniendo los pimientos y la harina, sofreímos durante un par de minutos sin dejar de remover para tostar la harina.
- Transcurrido este tiempo agregamos el tomate frito y el vino blanco. Removemos mientras continuamos cocinando hasta que el alcohol se evapore por completo.
- Cuando esto suceda agregamos el agua y dejamos que la salsa se cocine durante 15 minutos más.
- Después trituramos todos los ingredientes hasta obtener una salsa de pimientos sin tropezones y bien ligada.
- En una sartén más grande ponemos la tortilla y la cubrimos con la salsa.
- Tapamos la sartén y cocinamos durante 10 minutos más a fuego bajo.
Transcurrido este tiempo ya podemos servir nuestra tortilla en salsa.
