Tipos de leche vegetal. Cada vez son más las personas que deciden eliminar la leche de vaca de su dieta habitual. Esto suele suceder por varios factores. Uno de los más importantes son las alergias o la intolerancia a la lactosa y la incapacidad de digerir las proteínas o los azúcares que contiene la leche de vaca. Otro de los motivos que suele llevar a prescindir de la leche es la tendencia a un cambio en la alimentación y la sustitución de productos de origen animal por los de origen vegetal.
Por ello en el mercado cada vez podemos encontrar con mayor facilidad más variedad de leches vegetales, aunque el término correcto para estas es el de bebidas vegetales. una de las más conocida es la leche de soja, pero no es la única. ¿Como se usan en recetas tradicionales?
Con todas estas bebidas podemos elaborar todo tipo de recetas veganas. Para ello solo tendremos que sustituir las cantidades de leche de vaca indicada en las distintas elaboraciones por la leche vegetal que deseemos utilizar.
¿Se pueden sustituir por la leche de vaca?
Aunque cada uno de estos tipos de leche vegetal puede aportarnos distintas vitaminas y minerales, cabe destacar que ninguna de ellas es una alternativa que iguale al 100% los nutrientes, vitaminas y minerales que la leche de vaca aporta a nuestra dieta.
No hay que entender este tipo de bebidas como un sustituto a la leche de vaca a menos que se tenga una intolerancia a la lactosa o una alergia a dicho alimento o a sus proteínas, sino como un completo. Ya que este tipo de bebidas no aportan las cantidades necesarias de vitamina D y calcio que sí están presentes de forma natural en la leche de vaca, pero nunca en los distintos tipos de leche vegetal.
