Esta tarta de yogur griego es un postre sencillo, rápido y sin complicaciones adicionales. Muy fácil y cómodo para comidas familiares o cenas con amigos, aparte de que es una buena tarta sin horno que podéis llevaros a vuestro terreno agregándole aquella mermelada que os guste más, ya que es un pastel frío que admite multitud de variantes.
Esta tarta sigue la misma «filosofía» que la clásica tarta de queso sin horno que se elabora con gelatina o grenetina, ya que empieza con una base de galletas y mantequilla muy sencilla de elaborar, seguida de una crema de yogur y terminada con una capa de mermelada. En este caso yo he utilizado mi mermelada de higos casera, ya que combina a la perfección con el sabor ligeramente ácido del yogur.
Es una tarta muy ligera, no tiene azúcar en exceso para así poder apreciar ese sabor ligeramente ácido del yogur que os comentaba antes. Mi recomendación es que probéis la crema una vez incorporado el azúcar y si lo considerais necesario agreguéis un poco más. Aparte y teniendo en cuenta que este pastel de yogur griego consta de 3 elaboraciones distintas y que todas ellas son muy fáciles y rápidas de realizar, solo os diré que dedicando unos 20 minutos y con sólo 6 ingredientes tendremos un postre de sobresaliente, que podremos utilizar en ocasiones especiales.
Ingredientes para 8 raciones
- 500g yogur griego natural
- 300ml leche evaporada
- 200ml nata para postres (crema para batir)
- 80g azúcar
- 70g mantequilla
- 6 hojas de gelatina neutra + 2 para la cobertura
- 300g mermelada de higo
- 200g galletas «maria»
Cómo hacer tarta de yogur griego sin horno
- Comenzamos haciendo la base para así darle tiempo a que enfríe y quede más firme mientras hacemos la crema de yogur. Para ello trituramos las galletas, podemos hacerlo en un procesador de alimentos o en un recipiente con ayuda de un almirez/mortero. Debemos conseguir una harina fina de galleta sin tropezones.
- A continuación derretimos la mantequilla. Esto podemos hacerlo en el microondas o en un cazo poniéndolo a fuego medio. Una vez que esté fundida la reservaremos.
- Forramos la base del molde que vayamos a utilizar con papel de horno. En mi caso he usado un molde desmontable de 24cm de diámetro, pero podéis usar sin problema uno de entre 20 y 24cm. Cuanto más pequeño sea este, mas alta nos quedará la tarta de yogur griego.
- Luego vertemos la harina de galleta y la mantequilla fundida. Mezclamos hasta obtener una mezcla homogénea. Debemos ir presionando al tiempo que extendemos para cubrir toda la base con la «masa» de galleta. Un truco muy sencillo es presionarla con la base de un vaso para que nos quede lisa y compacta. Cuando la tengamos la llevaremos a la nevera mientras elaboramos la crema de yogur.
- Para hacer la crema ponemos en una olla yogur, leche evaporada, nata para postres y azúcar. Calentamos la mezcla a fuego bajo mientras removemos hasta conseguir una crema líquida pero bien ligada.
- Mientras que esto sucede pondremos 6 hojas de gelatina en un recipiente con agua. Debemos ponerlas 1 por 1 para que se hidraten correctamente y dejarlas durante 3 o 4 minutos bien sumergidas.
- Cuando la mezcla de la crema esté tibia le agregamos las hojas de gelatina bien escurridas y continuamos removiendo para integrarlas.
- Sacamos el molde de la nevera y vertemos la mezcla. Esta no tiene que estar caliente, debemos pasarla al molde con mucho cuidado, mi recomendación es que vertáis la mezcla sobre un cazo de servir que situaremos próximo a la base, así evitaremos que la galleta se desprenda.
- Después llevamos la tarta a la nevera durante al menos 4 horas, aunque cuanto más tiempo de frío le apliquemos mejor le irá pués quedará más firme a la hora de añadirle la última capa de mermelada.
- Transcurrido este tiempo hidratamos 2 laminas mas de gelatina(hacerlo del mismo modo que hicimos para la crema). Cuando esté hidratada pondremos la mermelada en un cazo y agregaremos la gelatina y calentamos la mezcla a fuego medio hasta que ambos ingredientes queden bien integrados. Es importante no calentar la mezcla en exceso para no dañar la crema de la tarta a la hora de verter la cobertura.
- Terminamos poniendo la mermelada sobre la crema que ya se habrá endurecido, continuaremos extendiéndola para que quede completamente cubierta y bien distribuida. De nuevo la llevamos a la venera por un par de horas como mínimo. Transcurrido este tiempo ya podemos desmoldar nuestra tarta de yogur griego.
