- 250ml de nata para postres (aproximadamente 1 taza)
- 4 láminas de gelatina neutra (8g)
- 150g de mermelada de fresa (aproximadamente 1/2 taza)
- 1 lámina de gelatina neutra para la cobertura
Cómo hacer tarta de queso sin horno
- Comienza preparando el molde, para ello pon papel de horno a la base para poder desmoldar fácilmente.
- Ajusta el molde para que quede bien sujeto. A continuación, coloca una tira de acetato en los bordes para un acabado perfecto.
- Continua haciendo la base de galletas. Para ello trocea las galletas María con las manos. Tritura los trozos con un mortero o procesador de alimentos hasta obtener una textura fina.
- Derrite la mantequilla en el microondas durante 10-20 segundos a máxima potencia.
- Mezcla la galleta triturada con la mantequilla hasta obtener una consistencia similar a la arena mojada.
- Pon la mezcla en el molde y repártela de forma uniforme.
- Compacta y alisa la mezcla para formar una base consistente.
- Lleva al frigorífico unos minutos para que endurezca.
- Ahora prepara la crema de queso. Para ello pon en un cazo el queso crema, añade el azúcar y remueve hasta obtener una crema suave.
- Agrega después la nata para postres y mezcla hasta conseguir una crema suave y untuosa.
- Hidrata 4 láminas de gelatina neutra en agua fría durante 5 minutos.
- Calienta la mezcla de queso a fuego mínimo. Procura que la temperatura no supere los 60°C para que la gelatina no se estropee. Escurre la gelatina y añádela a la crema de queso caliente, removiendo hasta que se diluya completamente.
- Retira del fuego y vierte la crema sobre la base de galleta, utilizando una cuchara para evitar que se rompa la base.
- Lleva al frigorífico durante un par de horas hasta que la crema esté firme.
- Después de este tiempo prepara la cobertura. Para ello calienta 150g de mermelada de fresa a fuego mínimo.
- Hidrata 1 lámina de gelatina neutra en agua fría durante 5 minutos.
- Escurre la gelatina y añádela a la mermelada caliente, removiendo con unas varillas hasta diluirla completamente.
- Agrega la cobertura y repártela uniformemente con una lengua de repostería.
- Lleva al frigorífico y refrigera durante un mínimo de 6 horas, aunque lo ideal son 24 horas para obtener una tarta de queso bien firme.
- Finalmente solo tienes que desmoldar abriendo el molde y levanta con cuidado. Retira el acetato y con cuidado pásala a un plato.
Consejos para hacer la tarta de queso perfecta
- Si no tienes acetato, puedes usar tiras de papel de horno que superen unos centímetros la altura del molde.
- Tritura las galletas en un procesador de alimentos o con un mortero.
Asegúrate de que todas las galletas queden bien impregnadas de mantequilla para lograr una base consistente. - Si no dispones de un pisapapas, puedes usar un vaso o incluso presionar la mezcla con la lengua de repostería. Asegúrate de que toda la base tenga el mismo grosor.
- Procura que la temperatura no supere los 60 °C; esta es la temperatura idónea para que la gelatina no se estropee y gelifique correctamente más tarde.
- La cantidad de azúcar recomendada es para una crema un poco ácida. Si deseas que sea más dulce, agrega 20 g adicionales de azúcar.
- Al verter la crema sobre la base de galletas, hazlo con suavidad y utilizando la lengua de silicona o el reverso de una cuchara para evitar que se desprendan migas de la base.
- Para que quede perfecta, lo ideal es dejarla reposar durante 20 horas. De este modo, nos aseguramos de que esté bien firme antes de desmoldarla.
- La cantidad de gelatina recomendada para la cobertura es para que no quede demasiado firme. Si prefieres obtener una cobertura más sólida, agrega una lámina o 2 g adicionales de gelatina o grenetina.
- Si no pusiste la tira, te recomendamos pasar un cuchillo alrededor del molde con cuidado para no dañarlo al desmoldar.
