Tahini. El tahini también conocido como tahina, tahin, tahine es una especie de pasta que se hace con una base de semillas de sésamo tostadas y que se puede usar en muchas recetas árabes, pero quizás la recetas más conocidas que se elaboran con tahini sean el hummus, el baba ghanoush (puré de berenjenas) o los falafel, pero no son las únicas recetas que se pueden elaborar con tahini o pasta de sésamo, más adelante, en futuros post os vamos a mostrar un sinfín de ellas.
Hace unas semanas hablábamos de las propiedades del sésamo y de cómo aprender a diferenciar si el sésamo esta tostado o no, hoy vais a entender por qué. Y es que para hacer tahini es imprescindible que el sésamo que usemos esté tostado (si no estáis seguros podeis consultar el pos para saber si el sésamo esta tostado), si el que tenemos es crudo no pasa nada, lo tostamos nosotros mismos.
Si hacéis demasiada cantidad no pasa nada, el tahini se puede guardar en la nevera durante unos días, nosotros no recomendamos que sean más de 7 u 8 días, no porque se vaya a estropear, sino porque pierde su esencia. Para conservarlo siempre es mejor un tarro de cristal que cierre herméticamente.
Ingredientes
- 2 cucharadas de sésamo
- 4 cucharadas de líquido (agua o un aceite que sea suave)
- 1 poco de sal
Tahini elaboración
- Lo primero es saber si el sésamo esta tostado, si no lo está lo vamos a tostar, para ello enjuagamos las semillas bajo del grifo y lo escurrimos bien, para ello lo mejor es dejarlo un rato en un colador hasta que se que por completo. Una vez seco lo ponemos en una sartén a fuego medio-alto durante más o menos 5 minutos o hasta que el sésamo cambie ligeramente de color. Si el sésamo ya está tostado solo hay que saltarse este paso.
- Dejamos que el sésamo se enfríe. La razón de enfriar por completo el sésamo se debe a que al triturarlo y debido a la fricción, puede aumenta la temperatura de las semillas de sésamo. Si lo tostamos justo después de haberlo tostado la temperatura del sésamo podría aumentar demasiado y hacer que este tenga notas amargas que pueden arruinar nuestro tahini.
- Cuanto esté completamente frío lo pondremos en una picadora o un molinillo eléctrico y añadimos el líquido que más nos guste (en nuestro caso un aceite de oliva muy suave) y un poquito de sal (un pellizquito pequeño).
- Picamos muy bien los ingredientes hasta conseguir una especie de pasta. Al ser poca cantidad de tahini la que estamos preparando las semillas tienen tendencia a quedarse pegadas en las paredes de la picadora. Para ello lo mejor es usar una lengua de cocina o espátula para empujar los ingredientes hacia el centro y volver a triturar.
- Repetimos el proceso tantas veces como sea necesario hasta que nos quede un tahini más o menos liso. Si veis necesario añadir un poco mas de agua o aceite para que quede más suave adelante, pero cuidado porque corremos el riesgo de que en vez de tahine nos quede un aceite de sésamo.
- No es necesario que nos quede una salsa totalmente “fina” o “lisa”. Una vez que tengamos una pasta bien triturada con los ingredientes integrados por completo es el resultado que estábamos buscando y ya tenemos listo nuestro thahini. ¿Os atrevéis con esta receta de thahini?
