El solomillo de cerdo relleno de bacon y frutos secos es una receta de carne muy fácil de elaborar, hecha al horno en el que la mayor dificultad que encontramos es abrir el solomillo, pero si no sois muy hábiles con el cuchillo podemos pedir al carnicero y lo hará encantado.
Esta receta de solomillo de cerdo es perfecta para servirla en ocasiones especiales, particularmente para comidas familiares o celebraciones como por ejemplo Navidad o Nochevieja ¡Queda con un corte espectacular! y la salsa que lo acompaña es el complemento ideal para esta receta de carne rellena.

Ingredientes para 2 personas
- 1 solomillo de cerdo
- 150g avellanas o nueces
- 80g pasas
- 150gr ciruelas
- 1 manzana.
- 4 o 5 sabanas de queso mozzarella
- cebolla carameliza
- 1 vaso de brandy
- 150g bacon
- aceite de oliva virgen extra
- mantequilla
- sal y pimienta
Solomillo relleno elaboración
- Lo primero que vamos a hacer es poner las pasas y las ciruelas junto con el brandy, las dejaremos macerando un rato(30 minutos mas o menos) para que se hidraten y tomen el sabor.
- Después picamos las avellanas o las nueces con ayuda del mortero o un robot de cocina.
- A continuación salpimentamos nuestro solomillo por ambos lados.
- Una vez hecho esto procedemos a rellenarlo. En primer lugar vamos a poner el queso, bacon, avellanas o las nueces junto con las pasas y las ciruelas deshuesadas. Cerramos el solomillo relleno y lo atamos con hilo bramante(recuerda guardar algunas pasas y ciruelas para la salsa).
- En una sartén bien caliente y con un poco de aceite vamos simplemente a marcarlo, lo sellamos y lo pasamos a una bandeja de horno.
- Con el horno precalentado a unos 180ºC metemos el solomillo y lo tendremos aproximadamente durante 90 minutos.
- Entre tanto iremos haciendo la salsa. En la misma sartén que hemos marcado antes el solomillo ponemos una nuez de mantequilla y cuando esté caliente pondremos la manzana cortada en trocitos y la salteamos. Cuando dorada vamos a añadir las pasas y las ciruelas deshuesadas, las salteamos un poco junto con la manzana y añadimos la cebolla caramelizada, dejamos que se cocine todo junto unos minutos. Por último añadimos el brandy en el que hemos tenido a remojo las pasas y las ciruelas. Dejamos que el brandy reduzca en la cocción.
- Ahora vamos a triturar la salsa con ayuda de la batidora o el robot de cocina.
- Sacamos el solomillo del horno y lo dejamos enfriar un poquito. Cuanto se temple quitamos el hilo bramante y cortamos las porciones.
- Muy importante es que la salsa esté bien caliente cuando la vayamos a servir. Una vez cortado el solomillo ponemos la salsa por encima y ya tenemos listo para servir un delicioso plato de carne que estoy segura no os va a decepcionar.
