Hoy os traigo un solomillo a la pimienta verde, un clásico de las recetas de carnes que se asocia a los banquetes de bodas y comuniones, ya que hace algunos años era un imprescindible en este tipo de eventos. En la actualidad es un plato que ha caído en el olvido, pero que es una de las recetas rápidas para preparar un solomillo, que suele gustar a todo el mundo y que es muy fácil de elaborar.
Aunque en esta ocasión lo he preparado con solomillo de cerdo, la salsa de pimienta también es ideal para acompañar unos filetes, un entrecot o solomillo de ternera y con unas pechugas de pollo queda de lujo. Con esta salsa conseguimos una carne muy sabrosa y suave, eso si, no olvidéis el pan porque es imprescindible para mojar y untar esta salsa gloriosa.
El origen de la salsa de pimienta es incierto, pero se cree que se inventó en París en los años 20 y fue creada para acompañar los filetes con mucha pimienta y una salsa de nata, para así aprovechar los jugos de sellar la carne de una forma distinta y mucho más elegante para la época. De esta receta existen otras muchas variantes, las más comunes son el solomillo al salsa de queso cabrales o queso azul o la salsa de champiñones.
Ingredientes para 4 personas
- 1 cucharada de aceite de oliva
- 25g de mantequilla
- 250cc de nata líquida
- pimienta verde
- sal
- 2 solomillos de cerdo limpios
Solomillo a la pimienta elaboración
- Limpiamos los solomillos y los cortamos en medallones. Es importante que todos los trozos de carne tengan el mismo grosor.
- En una sartén, ponemos la mantequilla para que se funda (ojo que no se queme).
- Escurrimos la pimienta verde de su líquido y la salteamos en la sartén con la mantequilla.
- Una vez esté dorada la pimienta añadimos los medallones de solomillo salpimentados y los sellamos.
- Cuando los solomillos estén sellados añadimos la nata y la llevamos a ebullición para que reduzca la salsa. Ya tenemos listos para servir un delicioso solomillo a la pimienta.
