El sésamo (procedente del latín) es también conocido como ajonjolí (proveniente del legado árabe en nuestro país), es una semilla utilizada en multitudes elaboraciones culinarias tanto dulces como saladas. Elaboraciones como por ejemplo: falafel, para hacer tahini, en humus, ensaladas, patatas al ajo cabañil, regañas, como decoración para empanadas y panes, para hacer gomasio o sal de sesamo, etc.…
Por norma general podemos encontrar el sésamo sin problemas en la sección de especias de cualquier supermercado. Este puede estar etiquetado como sésamo o como bien comentábamos al principio, como ajonjolí. Lo más complicado cuando compramos ajonjolí es diferenciar entre si este es crudo o está tostado. Algo indispensable para algunas elaboraciones. Por eso hoy vamos a intentar desvelar cómo diferenciarlo.
Si vamos a usar sésamo en elaboraciones en las que la semilla se vea no hay problema. Pero dado que el ajonjolí se puede usar en multitud de formatos como por ejemplo aceite o pasta de sésamo es muy IMPORTANTE tener en cuenta que el sésamo está incluido en la lista de los alérgenos alimentarios más comunes según la Unión Europea. Así que mucha precaución si alguna vez usamos ajonjolí en una cena con invitados o personas a las que no conozcamos demasiado. O bien les preguntáis antes del evento o les avisáis cuando sirváis el producto en cuestión.

¿Cómo diferenciar si el ajonjolí está tostado a crudo?
Es importante aprender a diferenciar si el ajonjolí que compramos es crudo o tostado. Esto debería estar indicado en el recipiente que compramos, pero no siempre es así y nos puede arrumar nuestras recetas con sésamo.
Saber si está tostado o no es relativamente fácil y se observa a simple vista en el color del mismo. El ajonjolí crudo es de color blanquecino y el tostado tiene un ligero color dorado. Si aún así no sois capaces de advertir si está tostado o no, un buen truco es tostar un poco en una sartén a fuego medio-fuerte durante unos minutos (hasta que cambie de color) y probarlo, si este queda amargo es que ya estaba previamente tostado, sino ya sabéis que el sésamo que habéis comprado es crudo.
Propiedades del ajonjolí
El sésamo, como la gran mayoría de frutos secos y semillas, contienen un alto porcentaje de grasas, puede que esté entorno al 50%, lo que es altamente energético, pero también altamente calórico (unas 600 calorías por cada 100 gramos ingeridos). En consecuencia debe ser consumido de modo muy moderado en personas que estén a dietas o tengan problemas de control de peso, aunque debemos tener en cuenta que el ajonjolí como todas las semillas en cualquier elaboración se usa en pequeñas cantidades.
Beneficios de las semillas de sésamo
Protegen el sistema cardiovascular, mejora el estado de las arterias, ayuda prevenir el infarto de miocardio y angina de pecho, ayuda a mejorar el estado de personas diabéticas ya que reduce la presión arterial y el nivel de glucosa en diabéticos he hipertensos, ayuda a controlar el estrés, la ansiedad, el insomnio, la depresión y la falta de energía.
Previenen la osteoporosis, nos mantiene jóvenes. Sus vitaminas y minerales y antioxidantes mantienen en forma el sistema inmunológico y combaten su oxidación natural. Protegen el aparato digestivo, mejora la salud bucal.
