No hay que ser un experto en idiomas, ni siquiera en italiano para saber que el término saltimbocca significa salto en la boca, que en realidad se escribe salt’ im bocca. Una abreviatura muy acertada para mi gusto. Un Salt’ im bocca o saltimbocca no es otra cosa sino un fino filete de ternera que vamos a rellenar con ingredientes que harán de este un bocado una explosión de deliciosos sabores en nuestro paladar. Como muchos de vosotros ya habréis presupuesto el saltimbocca es un plato típico de la cocina italiana, más concretamente de Roma.
En este caso los hemos acompañado con unas verduras cocidas, pero también podéis servirlos con unas patatas, ya que estas le van genial a esta receta. Da igual que sean patatas al horno, hervidas o frita. La cuestión es que ese punto neutro que le da la patata con la salsa es una combinación perfecta.
ingredientes para 4 personas
- 8 filetes de ternera muy finos y pequeños
- 4 lonchas finas de jamón serrano
- 8 hojitas de salvia
- Medio vaso de vino blanco seco
- Aceite de oliva
- Sal
- Pimienta
Saltimbocca elaboración
- Aplastamos bien los filetes y ponemos sobre cada uno media loncha de jamón recortando lo que sobresalga. Colocamos una hoja de salvia.
- Enrollamos sobre sí mismo y cerramos el rollito con un palillo para que no se salga el relleno.
- Calentamos un poco de aceite en una sartén antiadherente a fuego medio, y doramos los rollitos.
- Añadimos el vino, tapamos la sartén y dejamos cocer a fuego lento unos 15 minutos.
- Pasado ese tiempo, cubrimos con agua y media pastilla disuelta de caldo, volvemos a taparlo y dejamos cocer durante unos 20 minutos más.
- Servimos recién hecho y acompañado con nuestra guarnición favorita.
