La salsa harissa, es una receta de cocina típica de Túnez y del Maghreb en general, es algo parecido a una especie de pasta que se elabora con pimientos rojos, ajos, semillas de cilantro, comino y cucharadita de alcaravea. La harissa es ideal para acompañar el cuscús y el tayin, pero siempre puedes experimentar y probar cosas nuevas.

- 2 pimientos rojos dulces
- 100gr de guindillas secas rojas
- 6 dientes de ajo pelados
- 4 cucharadas de aceite de oliva
- 1 cucharadita de semillas de cilantro molidas
- 1 cucharadita de comino molido
- 1 cucharadita de alcaravea

Abre las guindillas y quítales el rabo y las semillas. Ponlas en remojo en agua caliente durante media hora. Pasado ese tiempo, escúrrelas y pícalas. Tritúralas junto con el resto de los ingredientes hasta obtener una pasta. Guarda la salsa en un tarro hermético cubriéndola con aceite de oliva. Déjala reposar unas 12 horas antes de servirla.
Es conveniente usar guantes de goma o de algodón para manipular las guindillas. Esta salsa harissa es típica de Marruecos y Túnez. Se utiliza como condimento para el cuscús y los tajines. Se suele usar diluyendo una cucharadita en un cucharón de caldo, y este a su vez se añade al cuscús. Cuidado que pica mucho.
Puedes usarla como condimento picante. Es muy normal que en los países cálidos se tomen los aderezos más picantes ya que producen sudor, lo que es un efecto refrigerador del cuerpo.
Esta salsa harissa marroquí y tunecina se utiliza como condimento para el cuscús, echándole una cucharadita al caldo y para los tajines. Pero le puedes dar muchas aplicaciones más, sin ir más lejos las patatas bravas.
