Hoy tenemos la salsa agria es una habitual de los smørgasbørg suecos y daneses. Se suele servir para acompañar platos de ahumados alemanes o escandinavos. La salsa agria resulta deliciosa y refresca en la boca, lo que ayuda a comer hasta reventar sin apenas darnos cuenta.
Esta salsa agria recuerda vagamente al tzatziki griego, pero con algunas variaciones tales como la cebolla. En casa la hacemos mucho en casa para acompañar carnes como el pollo a la plancha o las chuletas de cordero y para pescados cómo el salmo. También es perfecta para patatas fritas o asadas y hasta para aliñar una ensalada.
Ingredientes para la salsa
- 1 yogur cremoso
- 1 brick pequeño (150 ó 200 cc.) de nata líquida
- 3 ramas de eneldo fresco
- limón
- comino
- sal
- pimienta negra recién molida
- 1/2 cebolla
- 1/2 pepino
Salsa agria elaboración
- Cortamos el pepino y la cebolla en láminas muy fina para nuestra salsa agria (a mi me gusta cortarlo todo muy pequeño, pero en la salsa original, los vegetales se cortan en laminas finas.
- Cubrimos con sal gorda ambos ingredientes y los dejamos mas o menos media hora (así evitamos que repitan después).
- Transcurrido este tiempo lavamos con abundante agua fría y dejamos escurrir sobre un colador para que la salsa no resulte acuosa.
- En un bol grande ponemos el yogur, la nata, el zumo de medio limón, un pellizco de sal, agregamos también un poco de pimienta recién molida y el eneldo fresco picado muy fino. Batimos todo con ayuda de unas varillas hasta que quede una mezcla cremosa, con aspecto de que esta empieza a montarse (este proceso debe hacerse en frío, si no no «montara»).
- Cuando esté «espumosa» la salsa agria, añadiremos la cebolla y el pepino que teníamos reservados, removemos suavemente para que mantenga la textura, pero ojo que debe estar todo bien mezclado. Y ya tienes lista una deliciosa salsa para servir.
