Una duda muy común a la hora de cocinar(sobre todo cuando empezamos a cocinar) es saber como calcular las raciones de alimentos correctamente por persona, siendo aun mas común y mucho mas confuso el uso de legumbres, pastas, arroces y cereales en general.
Calcular el tamaño de un filete ya sea de carne o de pescado es fácil y entra en juego la agudeza visual y sobre todo el sentido común para muchas personas. Lo mas aconsejable para tener una correcta alimentación es seguir al pie de la letra las indicaciones de la pirámide alimentaria y esto en la teoría esta genial, pero en la practica puede confundirnos un poco con las raciones de alimentos que debemos añadir a nuestras recetas caseras.
Seguro que alguna vez os habéis puesto a cocinar recetas con espaguetis o recetas con arroz en las que os habéis encontrado medidas como «puñados», por experiencia se que esto es muy confuso, ya que de repente te asaltan dudas tipo: ¿mi mano sera mas grande que la de quien elabora dicha receta? ¿un puñado grande o pequeño? ,etc..

Cierto es, que estas medidas tienen un origen bastante ancestral y son las que nuestras madres o abuelas usaban en la cocina, pero si no tenemos experiencia algo así puede llevarnos a un camino sin salida a la hora de hacer un plato nuevo y mucho más si estamos cocinando para un número de personas a la que no estamos acostumbradas.
Las raciones de alimentos que indicamos en esta publicación son raciones en crudo, es decir antes de la cocción. Siempre es importante tener en cuenta que son raciones recomendadas aproximadas y que todas las personas no comen lo mismo ni tenemos las mismas necesidades. Con esto nos referimos por ejemplo a que la ingesta de un niño de 4 años no es la misma que la de un niño de edad mas avanzada. Esto mismo sucede con los adultos, no come lo mismo una mujer de 30 años que un hombre de 70, con lo cual lo mas acertado es usar estas cantidades de alimentos recomendadas paro siempre adaptándolas un poco.
