¿Que es la nata?. Hay una pregunta recurrente que me hagáis mucho aquellas personas que me leéis desde fuera de España, sobre todo aquellos que estáis en América Latina. Pues hoy voy a intentar aclarar todas vuestras dudas, para que podáis adaptar cualquiera de mis recetas, esteis donde esteis. Porque este no es un producto exclusivo de España, lo que sucede es que otros países se conoce con distintos nombres.
Para comenzar conviene aclarar que la nata es la grasa que se obtiene de la leche recién ordeñada. No os diré que no es imposible hacerla en casa, de hecho no hace mucho os mostré cómo hacer crema para batir casera. Pero encontrarla en supermercados es sencillo y relativamente económico.
¿Que es la nata o crema de leche?
Se conoce como nata al producto lácteo rico en materia grasa que se obtiene de la leche fresca, con un contenido de materia grasa láctea de al menos un 10%. Es un ingrediente, de tonalidad blanca, aunque en ocasiones esta puede tener cierto tono amarillento.
¿Para que se usa?
Este ingrediente posee gran valor culinario, ya que en la cocina tiene múltiples aplicaciones, que van desde hacer postres, mejorar emplatados, elaborar bizcochos o magdalenas, salsas saladas y dulces, se puede usar como complemento para algunas sopas o cremas y elaborar platos salados en general.
¿Cómo se conoce en otros países?
Hay básicamente dos tipos, que son la nata para cocinar y la nata para montar. La diferencia entre ambas es la cantidad de materia grasa que estas contienen. Este factor es determinante a la hora de usarlas, ya que tienen distintas aplicaciones.
Nata para cocinar
Lo que conocemos como nata para cocinar tiene un mínimo de un 15% y un máximo de un 18% de materia grasa, por lo que no sirve para montar. Esta se usa para cocinar y hacer salsas como por ejemplo la salsa de queso cheddar o la que le ponemos al solomillo a la pimienta verde.
A esta crema, se la conoce en américa latina como crema de leche o nata espesa. Si os estáis en Estados Unidos esta se comercializa como heavy cream.
Nata para montar
La nata para montar tiene un mínimo de 35% de materia grasa, lo que la hace ideal para postres, recetas de tartas de queso, postres sin horno y todas aquellas recetas que requieran de crema montada en su elaboración. Sirve para hacer chantilly y además con ella se pueden hacer otras recetas básicas como la sour cream o la creme fraiche.
A esta otra, se la conoce en América latina como crema de leche para montar, crema para batir o crema para montar. Si estáis en Estados unidos la encontrareis como heavy whipping cream.
