¿Qué es el kéfir? es una bebida fermentada de sabor refrescante y textura ligeramente cremosa, ha cautivado a paladares alrededor del mundo. Pero más allá de su delicioso sabor, guarda una historia legendaria y propiedades beneficiosas que lo convierten en un alimento excepcional.
El término «kéfir» se deriva del turco «keif», que significa «bendición». Según la leyenda, Mahoma obsequió esta bebida a los monjes ortodoxos del Cáucaso, transmitiendo un método de preparación que no debía ser revelado. Sin embargo, se cree que se elaboraba mucho antes, posiblemente descubierto por pastores que observaban la acidificación natural de la leche en zurrones de cuero.
Los gránulos o nódulos utilizados para fermentar la leche se conocen como «kéfir». Se cree que este alimento es responsable de la longevidad excepcional de las personas del Cáucaso, lo que le ha valido el apodo de «elixir de larga vida».
Es rico en probióticos, bacterias beneficiosas que favorecen la salud digestiva e inmunológica. Además, contiene vitaminas, minerales y proteínas, convirtiéndolo en un alimento nutritivo y completo.
¿Qué es el Kéfir?
Es una bebida probiótica rica en microorganismos beneficiosos, más abundantes que los que se encuentran en el yogur. Puedes prepararlo en casa de dos maneras: de leche y de agua.
Sabor y textura del Kéfir

Tipos: de agua o de leche
A la hora de procesarlo para su consumo estos son las 2 formas más habituales y conocidas. Ambos tipos se elaboran de idéntica forma. Tan solo varía la materia prima para su elaboración. Como he apuntado en el título de este apartado una de ellas se elabora con agua y otra con leche. Ambas elaboraciones poseen un sabor distinto. El de leche es más sabroso, y quizás por ello es el más extendido.
Cómo hacer kéfir de leche
En primer lugar te explicaremos paso a paso con hacer el producto con leche.
Ingredientes
- ¾ litro de leche
- 150 gramos de nódulos o granos de kéfir
- 1 recipiente de vidrio (de 1 litro de capacidad)
Elaboración
Deja que la leche alcance la temperatura ambiente en el recipiente de vidrio.
Añade los nódulos, tapa el recipiente y déjalo reposar durante 24 a 36 horas.
Observarás cómo los nódulos crecen. Si deseas que sea más claro que espeso, añade más leche (si prefieres una consistencia más espesa, déjalo como está).
Cuélalo y vuelve a introducirlo en la leche.
Consejos para conservarlo
- Guárdalo en un lugar fresco y seco, no demasiado frío ni muy cálido.
- Si no lo vas a consumir en unos días, puedes refrigerarlo.
- Lava tanto los nódulos como el recipiente con agua una vez por semana.
Cómo hacer kéfir de agua
El de agua se elabora a partir de agua purificada en lugar de leche. Aunque algunos creen que tiene más propiedades y beneficios, esta cuestión es puramente subjetiva.
Ingredientes
- 1 litro de agua mineral
- 3 cucharadas soperas de nódulos de kéfir de agua
- ½ limón
- 1 higo seco
- 3 cucharadas soperas de azúcar integral
Elaboración
- Mezcla los nódulos de kéfir de agua con el agua mineral.
- Agrega el limón y el higo seco.
- Deja fermentar durante aproximadamente 42 minutos.
- Remueve o agita una o dos veces durante la fermentación.
Diferencias entre los 2 tipos de Kéfir
El elaborado con agua mantiene sus propiedades intactas, ya que el agua no altera de ningún modo su estructura. En cambio, al elaborarlo con leche, puede verse modificado, ya que la leche aporta otra serie de nutrientes. Pese a ello, el más conocido en Europa es el de leche. Se trata de una bebida fermentada de aspecto parecido al yogur, aunque algo más líquido.
Propiedades Nutricionales
- Varía en su contenido nutricional según su origen (de leche o de agua). Sin embargo, todos los tipos contienen potentes probióticos. El de leche es rico en calcio, proteínas y vitaminas del grupo B. Además, reduce el contenido de lactosa, transformándola en ácido láctico y evitando intolerancias.
- También contiene vitamina K2, que ayuda a absorber el calcio y convertirlo en masa ósea. Además, contiene vitaminas A, D, biotina y minerales como potasio y fósforo.
Los gránulos de kéfir contienen alrededor de 400 millones de microorganismos por gramo, incluyendo bacterias del tipo Lactobacillus que protegen al organismo de bacterias dañinas. - Además, contiene un polisacárido insoluble llamado kefiran, que actúa como un potente antimicrobiano natural.
Diferencias con el Yogur:
En el yogur, solo ocurre una fermentación láctica, mientras que el kéfir provoca una fermentación lacto-alcohólica y carbonatada de la leche.
El contenido de alcohol en el kéfir generalmente no supera el 1%, una cantidad insignificante (a menos que haya problemas graves de hígado).
