Cómo hacer porchetta italiana
- Primero, debes asegurarte de que la piel esté lo más seca posible, ya que esto contribuirá a que quede crujiente. Si tienes tiempo, déjala en la nevera durante al menos 12 horas, pero hasta tres días es aún mejor. También puedes ayudar a secar la piel mezclando 20g de sal y 4g de levadura química y masajeándola por toda la superficie de la carne. Esto ayudará a crear burbujas de aire que darán a la piel un acabado crujiente.
- Continua con el sazonado de la porqueta: Para darle sabor a la carne, realiza cortes profundos en la superficie de la porqueta con un cuchillo afilado.
