Hoy voy a enseñaros cómo hacer pollo con almendras, ese plato de pollo adaptado de la cocina china cantonesa que siempre encontramos en prácticamente todos los restaurantes chinos que visitamos. Se elabora con pollo, verduras y almendras, todo unido con una deliciosa salsa que hace de hilo conductor para conseguir un conjunto de sabores ligeramente agridulces y sobre todo exóticos.
Esta adaptación de la cocina cantonesa siempre es perfecta a la hora de compartir junto a otros platos chinos como el pollo al limón estilo chino o el cerdo agridulce, pues son 3 de los platos más conocidos y típicos de los restaurantes chinos(comida asiática). Como sugerencia para acompañar este plato de pollo con almendras os propongo arroz chino o tallarines chinos.
Ingredientes para 4 Personas
- 1 pechuga de pollo
- 3 cucharadas de salsa de soja (para macerar el pollo)
- 2 dientes de ajo
- jengibre (+/- un trozo de 2cm )
- 1/2 pimiento rojo
- 1 pimiento italiano
- 1 zanahoria
- 1/2 calabacín
- 1/2 cebolla
- 12 almendras crudas
- 40ml salsa de soja (para la salsa)
- 2 cucharadas de ketchup
- 1 cucharada de miel
- 1/2 vaso de agua
- 2 cucharadas de maicena
Cómo Preparar el Pollo con Almendras
- Empezaremos cortando la pechuga de pollo en trozos de «bocado».
- Nos hacemos con un tupper(donde vayamos a poner a macerar el pollo) donde rallamos el jengibre que previamente habremos pelado. Hacemos lo mismo con los dientes de ajo y seguidamente agregamos la salsa de soja.
- A continuación introducimos los trozos de pollo y removemos con la ayuda de un tenedor para que se impregne bien de la mezcla.
- Lo llevamos al frigorífico donde lo vamos a dejar macerando durante al menos 1 hora.
- Mientras tanto lavamos las verduras que vamos a utilizar para realizar este plato cantones.
- Después pelamos la cebolla y la zanahoria.
- Para continuar cortando todas las verduras en trozos de una tamaño similar al del pollo.
- Cuando haya transcurrido el tiempo mínimo de macerado de nuestra carne la podremos empezar a cocinar. Por lo que ponemos nuestro wok a fuego medio y añadiremos un poco de aceite para que se vaya calentando.
- Doraremos las almendras ligeramente en el wok. Cuando comiencen a tostarse las debemos retirar. Reservándolas sobre papel de cocina para retirarles el exceso de aceite.
- Continuaremos subiendo el fuego y añadiendo al wok las verduras. Las cocinaremos durante unos 4 minutos removiéndolas de vez en cuando. Transcurrido este tiempo las retiramos a un plato y las reservamos.
- Agregamos ahora al wok los trozos de pollo macerado. Sin bajar el fuego lo cocinamos hasta sellar la carne. Luego lo sacamos a un plato aparte y lo reservamos también.
- Para terminar la receta del pollo con almendras chino tenemos que elaborar la salsa. Para ello bajamos a fuego medio el wok y añadimos salsa de soja, ketchup y miel.
- Mientras se calientan los ingredientes anteriores, disolvemos removiendo la maicena en 1/2 vaso de agua.
- Añadimos la maicena disuelta y removemos bien todo hasta integrar los ingredientes.
- Inmediatamente añadimos el pollo que tenemos reservado. Debemos cocinarlo hasta que la salsa espese.
- Apartamos el wok del fuego y agregamos las almendras y las verduras. Hay que hacerlo sin parar de remover para que la salsa impregne completamente todos los ingredientes.
- Dejamos reposar un par de minutos en el wok antes de servir.
Transcurrido este tiempo ya podemos servir y disfrutar de un delicioso pollo con almendras estilo chino, como el del restaurante asiático pero sin salir de casa.
