Las patatas guisadas con huevo son perfectas para servirlas como plato único en los días más fríos. Por ejemplo, podemos hacer unas patatas estofadas con carne de res o ternera, pollo, cerdo, conejo, atún o bonito, chorizo, también patatas guisadas solas, etc. Todas estas variantes son sabrosas y contundentes. Sin embargo, para este guiso de papas en particular, la proteína que acompañará nuestras patatas son unos sencillos huevos. El resultado es una maravilla: un guiso casero que evoca recuerdos de nuestras madres y abuelas, porque en sus cocinas nunca faltaba un buen guiso de papas.
Ingredientes para 2 personas
- 2 dientes de ajo
- 1 puerro
- 1 cebolla
- 3 patatas
- 100g de tomate triturado
- 50g guisantes
- 1l caldo de pollo casero
- 2 huevos
- Perejil picado
- 1 cucharada de pimentón ahumado
- Aceite de oliva
- sal
Cómo hacer patatas guisadas con huevo
- Comienza picando los ajos. Corta el puerro por la mitad y luego trocéalo finamente. Pica la cebolla y finalmente chasca las patatas. Es crucial no cortarlas, sino chascarlas, ya que así liberarán parte de su almidón durante la cocción y esto ayudará a espesar el caldo. Este simple detalle marcará la diferencia en tu guiso de patatas.
- En una olla, pon aceite hasta cubrir el fondo y caliéntalo a fuego medio. Añade de inmediato los ajos con el aceite aún frío para aromatizarlo.
- Cuando los ajos comiencen a dorarse, dora el puerro, cocínalo un par de minutos y luego agrega la cebolla. Remueve, añade la hoja de laurel, sal al gusto y cocina hasta que el sofrito cambie de color y esté dorado. Este paso es sumamente importante, ya que la base de este plato es su sofrito inicial.
- Justo en ese momento, agrega el perejil picado y remueve para integrarlo con el resto de ingredientes. Cocina durante un par de minutos y añade también el pimentón. Remueve y de inmediato añade el tomate para evitar que el pimentón se queme. Agrega también las patatas, remueve y cocina durante 5 minutos más, removiendo de vez en cuando.
- Pasado este tiempo, añade los guisantes, remueve y sofríe un par de minutos, luego agrega el caldo. Tapa la olla y cocina durante 20 minutos, aunque el tiempo puede variar según el tamaño del corte y la variedad de patata que uses. Recomiendo que una vez transcurrido el tiempo, compruebes el punto de cocción de las patatas pinchando una con un cuchillo; si se desprende fácilmente, están listas, de lo contrario, cocina unos minutos más.
- Una vez que el caldo se haya espesado, es momento de añadir los huevos a tu guiso casero. Tapa la olla. El tiempo de cocción puede variar: si te gustan los huevos con la yema líquida, 4 minutos son suficientes; si los prefieres más cocidos, cocínalos entre 6 y 8 minutos.
- Sirve con cuidado de no romper los huevos y finaliza el plato de patatas guisadas con un poco de perejil picado.
