Las patatas bravas las puedes conocer también como patatas a la brava o papas bravas. Son patatas fritas cortadas de manera irregular y acompañadas de una salsa elaborada a base de pimentón dulce y pimentón picante. En la mayoría de casos la salsa brava es picante, aunque si no las queréis picantonas podéis sustituir el pimentón picante por dulce.
Existe mucha controversia sobre si las autenticas «patatas bravas a la antigua» se elaboran con tomate o no. Lo cierto es que dependiendo de la región donde se elaboren las encontraremos de una forma u otra. En Madrid la salsa se elabora partiendo de una roux y una base de pimentón. Por el contrario en la Comunidad valenciana y en Cataluña seguramente la salsa estará elaborada con tomate y las servirán con un poco de mayonesa.
Esto a su vez nos trae el dilema del origen de las patatas bravas. El cual aunque para muchos fué en Madrid, para otros no está tan claro. Lo cierto es que la primera mención documentada la encontramos en la obra Vivir en Madrid escrita en 1967 por el periodista Luis Carandell.
Ingredientes para 4 personas
- 800g de patatas para freir
- 30g de harina de trigo
- 60ml aceite de oliva
- 1 cucharada de pimentón dulce
- 1 cucharada de pimentón picante
- 1/2 cebolla
- 1 diente de ajo
- 200ml de caldo de carne
- sal al gusto
Cómo hacer patatas bravas
- Primero pelamos y lavamos las patatas para quitarles el exceso de almidón.
- Después las vamos a «chascar». Para ello introducimos la hoja del cuchillo uno o dos centímetros en la patata y después giramos la hoja del mismo 90º hasta arrancar el trozo de patata.
- Luego en una olla pon las patatas y cúbrelas con abundante aceite. Necesitamos que se confiten por lo que las cocinaremos a fuego bajo durante 30 minutos. Transcurrido este tiempo subimos el fuego al máximo y las freímos durante 10-15 minutos. Así quedarán tiernas por dentro y crujientes por fuera.
- Picamos el ajo muy pequeño y lo reservamos.
- Continuamos haciendo lo mismo con la cebolla.
- Para la salsa ponemos un cazo a fuego medio y agregamos aceite de oliva.
- Cuando tenga temperatura añadimos el ajo y lo cocinamos un par de minutos. Después agregamos la cebolla y la pochamos.
- Seguidamente añadimos el pimentón dulce y el picante. Removemos hasta integrarlos.
- Inmediatamente añadimos la harina y nuevamente removemos. Cocinamos durante un par de minutos para tostar la harina.
- Ahora bajamos el fuego y agregamos el caldo poco a poco(debe estar caliente). Al tiempo removemos constantemente con unas varillas. Debemos obtener una salsa homogénea, bien ligada y ligeramente espesa.
- Retiramos la salsa del fuego y la trituramos. El resultado tiene que ser el de una salsa lisa «sin tropezones». Podéis pasarla por un colador o por un chino si os gusta más.
- Finalmente pondremos las patatas en un plato y les agregaremos una generosa cantidad de salsa por encima.
