Cómo pasteurizar huevos. Aunque podemos comprar huevos pasteurizados en grandes superficies en muchas ocasiones es un desperdicio. Esto es por la cantidad de huevos que incluyen los envases que se comercializan. O sencillamente no tenemos a mano uno de estos establecimientos y necesitamos pasteurizar huevos en casa. Y tiene que ser de un modo rápido y sencillo para salir del paso. Pues eso es lo que vamos a hacer hoy. Os voy a mostrar una técnica muy sencilla con la que podéis pasteurizar los huevos en casa sin riesgo de contaminación.
¿Para qué usan los huevos pasteurizados? Los huevos pasteurizados se pueden usar en todas aquellas elaboración en las que el huevo va en crudo o cocinado a baja temperatura. Buenos ejemplos de lo que os comento son recetas como el tiramisú, la mayonesa casera, el merengue, etc.. Una vez que los huevos estén pasteurizados podemos usarlo normalmente para cualquier receta evitando el peligro de una contaminación alimentaria por salmonella.
Cómo pasteurizar huevos en casa
- Para comenzar a pasteurizar huevos vas a necesitar una olla no muy grande o un cazo y un termómetro digital de cocina. Sin termómetro esta técnica es complicada de llevar a cabo por no decir imposible. Ya que debemos saber en todo momento a la temperatura que está el agua.
- Para comenzar el proceso ponemos agua en una olla o cazo y lo llevamos al fuego. En todo momento vamos comprobando la temperatura con el termómetro. Una vez que el agua alcance los 60 grados centígrados ponemos los huevos en la olla. Vigilamos que el agua no supere los 64 grados centígrados. Los coceremos durante 4 minutos siempre entre 60 y 64 grados centígrados.
- Es importante que la temperatura del agua no supere los 64 grados centígrados, ya que los huevos comienzan a coagularse a esa temperatura.
Ahora tan solo debemos dejar que se enfríen a temperatura ambiente y ya podemos usarlos para cualquier elaboración en la que necesitemos huevos crudos. Ahora ya sabes cómo pasteurizar huevos.
