Ingredientes para 2 personas
- 2 piezas de osobuco de ternera
- 1 puerro
- 1 zanahoria
- 1 cebolla
- 3 dientes de ajo
- 4 tomates maduros
- 1/2 pimiento rojo
- 1 vaso de coñac
- 1l de caldo de carne
- 3 clavos de olor
- 1 cucharada pequeña de comino molido
- 1 cucharada de pimentón
- sal (al gusto)
- pimienta (al gusto)
- harina de trigo (de todo uso)
- aceite de oliva
Cómo hacer osobuco de ternera en salsa
- Para asegurar que el corte mantenga su forma durante el cocinado, es recomendable que inicies el proceso realizando cortes en los laterales de la pieza y eliminando cualquier exceso de grasa. Realiza cortes verticales, no demasiado profundos; con 3 o 4 cortes será suficiente. Este paso es crucial, ya que durante la cocción, la membrana tiende a encogerse, lo que podría causar que el hueso se desprenda y se salga. Al realizar estos cortes, garantizas que el morcillo mantenga su forma original durante la cocción.
- Posteriormente, ata las piezas con hilo bramante(hilo de algodón o hilo para cocinar.). Este procedimiento, al igual que el anterior, asegura que la pieza mantenga su forma durante la cocción y evita que la carne se separe del hueso. Para llevarlo a cabo, corta un trozo de hilo de unos 30 cm, coloca la carne en una tabla con el hueso hacia arriba y envuelve el hilo alrededor con un nudo corredizo o haz un nudo firme, pero no demasiado apretado para evitar que la carne se rompa. Repite este proceso con cada pieza.
- Una vez atados, sazona con sal y pimienta por ambos lados para realzar su sabor. Es fundamental distribuir los condimentos de manera uniforme.
- Después, cubre cada pieza con harina para sellar los jugos y espesar la salsa. Asegúrate de que esté bien cubierto y sacude el exceso de harina.
- A continuación, calienta una sartén con aceite y sella las piezas a fuego alto por ambos lados hasta que estén doradas. Este proceso ayuda a retener los jugos y realzar el sabor de la carne. Luego, retira las piezas a un plato y resérvalas.
- Mientras tanto, prepara las verduras: comienza picando muy pequeños los ajos y continúa cortando en brunoise la cebolla y el puerro.
- Una vez retirada la carne de la sartén, pon a fuego medio y agrega un par de cucharadas más de aceite. Añade los ajos picados, el puerro y la cebolla. Cocina durante 5 minutos o hasta que las verduras estén pochadas.
- Es conveniente aprovechar este tiempo para picar el pimiento rojo en dados y la zanahoria en fermière o granjera, según se muestra en el video.
- Transcurridos los 5 minutos, añade ambos ingredientes al sofrito y continúa cocinando durante 10 minutos más.
- Es un buen momento para rallar los tomates que se usarán para la salsa más adelante.
- Después, agrega las especias: comino molido, clavos de olor, pimentón, las hojas de laurel. Remueve e inmediatamente agrega los tomates que rallaste antes. Desde este momento, cocina 5 minutos más.
- Vuelve a poner las piezas de carne en la sartén, añade el coñac, sube a fuego alto y cocina hasta que el alcohol se evapore por completo (unos 5 minutos aproximadamente).
- A continuación, agrega el caldo, baja a fuego mínimo y cocina entre 2 horas y media y 3 o hasta que al pinchar la carne con un cuchillo esta entre y salga sin dificultad.
- Transcurrido este tiempo, retira la carne con cuidado para que no se rompa y resérvala.
- Pasa la salsa por un colador y ponla en un cazo u olla. Cocínala a fuego medio hasta que reduzca a la mitad y espese, tal como se ve en el video. Este proceso puede tardar entre 20 y 30 minutos.
- A la hora de servir, pon carne en una sartén con cuidado para que no se rompan, añade la reducción de la salsa caliente y cocina todo junto durante 20 minutos a fuego bajo.
