Siempre me gustaron mucho las nueces caramelizadas que sirven en los restaurantes chinos, estas suelen ir acompañadas de nata, me resultaban curiosas, crujientes y muy sabrosas. Pero como últimamente, y después de la última experiencia en el restaurante hindú de Catral apenas me fío de ir a comer a ningún sitio, mucho menos a un chino, por eso hago en casa mis recetas asiáticas favoritas entre las que están el pollo con almendras, el arroz tres delicias o estas nueces caramelizadas.
Estas nueces lo mismo nos sirven para un postre, un aperitivo, para adornar un bizcocho o cualquier otra elaboración. La única pega que yo le veo a este tipo de recetas de cocina es que son puro vicio, y es que parar de comer es un poco difícil cuando empiezas, pero tenéis que probar y hacerlas en casa, ya veréis como repetís prontito.
ingredientes
- 200gr nueces peladas
- 250gr azúcar
- 150 gr de agua
- Aceite para freír

Pelamos (en caso de que no lo estén) y limpiamos un poco las nueces, quitamos las posibles cáscaras o impurezas que puedan quedar, ponemos el agua a hervir junto con el azúcar removiendo sin parar, cuando esta rompa a hervir añadimos las nueces, dejamos hervir durante diez minutos aproximadamente en la mezcla, cuando el almíbar se vuelva de un color más dorado sacamos las nueces con ayuda de una espumadera y las dejamos escurrir.
Mientras que estas escurren el exceso de almíbar, ponemos a calentar abundante aceite en una sartén y cuando el aceite esté bien caliente, freímos las nueces, el resultado será mucho mejor si las hacemos por tandas, no deben estar mucho rato en el aceite por que se ponen negras, vuelta y vuelta y las sacamos con ayuda de una espumadera, las vamos poniendo sobre papel de cocina o sobre un colador.
A medida que las nueces se enfrían se van endureciendo y se pueden coger sin que se nos peguen a los dedos, con esta receta quedan quedan unas nueces caramelizadas sueltas y crujientes
