Tener un frasco con masa madre líquida en el frigorífico es un tesoro para quienes disfrutan haciendo pan o diferentes masas para algunas elaboraciones como pizzas, etc…. La masa madre líquida es una levadura natural que se consigue con la fermentación natural de la harina mezclada con agua y la reacción que produce junto a las bacterias que hay en el aire.
Alimentando esta mezcla y manteniéndola a una temperatura adecuada obtendremos una masa estupenda en 3-4 días. Con ella podrás elaborar un pan mucho más sabroso con una corteza crujiente y con una miga esponjosa con un aroma estupendo.
Mediante la masa madre además podéis obtener una conservación más prolongada del pan que elaboramos con ella y por supuesto podrás hacer una masa de pizza «muy especial».
Ingredientes para la elaboración
- 50g harina integral
- 350ml agua
- 300g harina de fuerza
- azúcar
Cómo elaborar Masa Madre
- El primer día mezclaremos 50g de harina integral con 50ml de agua. Dispondremos la mezcla en un bote de cristal que taparemos con un paño de cocina limpio y seco. Deberemos de dejarlo fermentar en un lugar tranquilo a temperatura ambiente(entre 20-25ºC) las primeras 24 horas.
- El segundo dia mezclaremos 100g de harina de fuerza con 100ml de agua y 20g de azúcar. El azúcar potenciará la fermentación. Con esta mezcla «alimentaremos» la elaborada el día anterior. Vuelve a dejarla reposar tapada con el paño dentro del frasco otras 24 horas.
- El tercer día añadimos a la mezcla 200g de harina de fuerza con 200ml de agua. Pasadas 12 horas de reposo y fermentación en las mismas condiciones que los días anteriores ya podeis utilizar la masa madre líquida.
- A la hora de incorporar la masa madre líquida en la elaboración de pan deberás retirar la cantidad que vas a utilizar del bote y dejarla reposar a temperatura ambiente hasta que veas que burbujea(+/-2 horas). Después elabora la masa del pan normalmente e incorpora la masa madre líquida al final.
¿Cómo debemos Conservarla y Alimentarla?
A la hora de conservar la masa en el frigorífico deberás hacerlo con el frasco bien cerrado, así se «adormecerá» la actividad bacteriana. Es muy posible que no elabores pan todos los días pero habrá que alimentarla/refrescarla 1 vez a la semana.
Cada vez que gastemos una parte de la masa madre líquida debemos añadirle la misma cantidad de harina y agua a la base. Por ejemplo: si gastas 120 gramos de masa madre añade seguidamente una mezcla de 60g de harina y 60ml de agua.
Si percibes un olor ácido o ves una capa líquida y oscura en la superficie de la masa no te asustes, es normal por la fermentación. Hay quien mezcla bien todo antes de utilizar la masa madre y también hay quien tira esa capa oscura. Lo que no debemos olvidar es que si se quita ese líquido fermentado la masa se hará más espesa y quizás no sea realmente lo que quieres.
