En esta ocasión, te mostraremos cómo preparar unos deliciosos Mac and Cheese , tambien conocidos como macaroni and cheese’, ‘macaroni cheese’, ‘mac ‘n’ cheese o macarrones con queso. Quizás junto con las hamburguesas, esta sea una de las recetas más conocidas de la cocina estadounidense. Es un plato de pasta sencillo y rápido, del que puedes obtener muchas raciones utilizando pocos ingredientes.
Los mac and cheese, cuyo origen se remonta a la Edad Media en Europa con guisos de pasta y queso, se popularizaron en Estados Unidos en el siglo XVIII gracias a los inmigrantes europeos. La receta moderna, con una salsa bechamel básica y queso cheddar, apareció en 1769 en el libro de Elizabeth Raffald. En 1937, Kraft Foods lanzó su icónica caja de mac and cheese instantáneo, consolidando el plato como un clásico estadounidense y expandiendo su popularidad a nivel global.
La receta original se elabora con un tipo de pasta corta llamada “coditos” (en inglés, elbows), y en Italia es conocida como “gomiti rigati”. Sin embargo, realmente este plato se puede hacer con cualquier variedad de pasta seca que te guste, siempre que sea corta.
Aunque no existe una receta definida y definitiva para este plato de pasta con queso al estilo americano, sí hay puntos en común en cuanto al tipo de pasta utilizada y la preparación de la bechamel ligera con quesos. Las diferencias suelen estar en las variedades y cantidades de queso, así como en las diferentes especias que condimentan este plato.
Ingredientes para 4 raciones
- 250g de pasta seca(coditos)
- 100g de queso cheddar rallado
- 100g de queso mozzarella rallado
- 30g de queso parmesano en polvo
- 20g mantequilla
- 20g harina de trigo
- 600ml leche (a temperatura ambiente)
- Pimienta negra recién molida(al gusto)
- nuez moscada(al gusto)
- ajo en polvo(al gusto)
Cómo hacer mac and cheese
- Para comenzar a elaborar tus mac & cheese, pon la pasta a cocer en abundante agua hirviendo y cocínala el tiempo que indique el fabricante. Cuando esté lista, sácala y déjala escurrir mientras preparas la salsa de queso.
- Ahora, en una olla a fuego medio, pon mantequilla. Una vez que se funda completamente, baja el fuego al mínimo y agrega la harina. Remueve constantemente durante un par de minutos, hasta que se forme una pasta que será el inicio de tu bechamel.
- Transcurrido este tiempo, agrega la leche poco a poco, continuando con el removido hasta disolver la pasta formada con la harina. Debes obtener una bechamel ligera, sedosa y sin grumos.
- Cuando la tengas, añade pimentón ahumado, pimienta molida, ajo en polvo y nuez moscada. Remueve hasta que las especias se integren completamente en la salsa bechamel.
- Luego, agrega la mitad de la mozzarella y remueve hasta que se funda e integre en la salsa. Añade también el queso cheddar en la misma proporción y remueve de nuevo. Finalmente, repite la operación con todo el queso parmesano. Puedes ver la textura de la salsa en el minuto 2:20 del video.
- Cuando la salsa esté lista, añade la pasta que reservaste anteriormente. Remueve hasta que quede bien impregnada. A continuación, pasa y reparte de forma homogénea los mac & cheese en un recipiente apto para horno. Sobre ellos, pon la mozzarella y el queso cheddar restantes.
- Luego, llévalos al horno y gratínalos a 180ºC durante 10 minutos. Verás que los coditos con una salsa de queso, con una salsa de quesocheese tendrán una costra dorada muy apetecible; ese será el momento de sacarlos del horno y servirlos.
