En esta ocasión te vamos a explicar cómo hacer lomo a la plancha, una de nuestras carnes favoritas. Este corte de categoría extra se sitúa junto al espinazo y bajo las costillas del animal, y tiene una forma alargada y cilíndrica que lo hace perfecto para gran variedad de preparaciones.
Una de las maneras más comunes de preparar esta pieza de carne es hacerla en adobo, pero hoy queremos hablaros de otra opción igualmente deliciosa y mucho mas sencilla: el lomo de cerdo a la plancha. Aunque es una carne blanca, con apenas grasa y apta para llevar una alimentación saludable, tiene el inconveniente de que si se cocina em exceso tiende, irremediablemente, a quedarse seca, algo nada agradable para el comensal.
Por eso, el método de cocción preferente para este tipo de piezas, es mediante calor seco, el cual se puede conseguir, por ejemplo, con el asado en la parrilla o a la plancha. Controlando el tiempo y la temperatura, conseguiremos que los cortes del lomo se mantengan jugosos, tiernos y en punto.

Es una excelente fuente de proteínas (20g por 100g), bajo en grasas saturadas (6,1 g por 100g) y rico en vitaminas del complejo B, como la vitamina B1 (tiamina), la vitamina B2 (riboflavina) y la vitamina B12 (cobalamina). Además, es una buena fuente de hierro (1mg por100 g) y zinc (3mg por100 g). Por cada 100 gramos, el lomo de cerdo a la plancha aporta aproximadamente 160 calorías.

Ingredientes para 4 personas
- 1kg de cinta de lomo
- 1 pizca de sal en escamas
- 1 pimienta negra
- aceite de oliva virgen extra
Para el aderezo
- 1 cucharada sopera de aceite de oliva
- jugo de limón (al gusto)
- 1 cucharada pequeña de ajo en polvo
- 1 cucharada de orégano seco
- pimienta negra (al gusto)
Cómo hacer la receta de lomo de cerdo a la plancha
- Para preparar lomo de cerdo a la plancha, lo primero que debes hacer es limpiar la cinta de lomo. Retira la capa externa de grasa con un cuchillo de hoja fina y afilada para facilitar la tarea.
- Una vez eliminada la mayor parte de grasa, procede a filetear el lomo. Corta el lomo en filetes de aproximadamente un centímetro de grosor, obteniendo 8 unidades (2 por persona).
- Espolvorea pimienta negra recién molida por los lados de los filetes de lomo de cerdo y presiona ligeramente para que se adhiera bien a la carne.
- Prepara el aliño: en un bol, mezcla ajo en polvo, orégano seco, pimienta negra, aceite de oliva y jugo de limón al gusto.
- Calienta una sartén a fuego medio-alto con una cucharada de aceite de oliva virgen extra. Cuando esté caliente, coloca los filetes de cerdo y deja que se cocinen sin moverlos.
- Dales la vuelta cuando al menear la sartén los filetes se desprendan por sí solos. Este proceso dura un par de minutos, así que estate atento para evitar que se pasen de cocción.
- Cocina los filetes un minuto más por el otro lado y retíralos de la sartén. Es en este momento, y no antes, cuando debes añadir la sal. Esto permitirá que los jugos de la carne se mantengan concentrados en su interior, logrando un filete tierno y jugoso.
- Para servir y disfrutar del lomo de cerdo a la plancha, emplátalo inmediatamente, añade el aliño al gusto y unas escamas de sal por encima.
