Aquellos de nosotros que fuimos niños en esa década recordamos con cariño estos limones rellenos, las naranjas heladas, y hasta esos cocos rellenos de un cremoso helado que nos encantaba a todos. Hoy, como un homenaje a nuestra infancia, hemos decidido recrear este delicioso postre, totalmente ochentero.
Además de aportar vitamina C y antioxidantes, los limones helados ofrecen un sabor cítrico que estimula el paladar y facilita la digestión, convirtiéndolos en la forma ideal de finalizar cualquier comida. En este artículo, te enseñaremos a prepararlo con una receta casera de helado de limón que es muy fácil y rápida de elaborar.
Ingredientes para aproximadamente 6 limones
Para el helado de limón
- 1 limón
- 1 taza de leche condensada (200g)
- 1 taza y media de nata para postres (300ml)
Para los recipientes
- 6 limones
Cómo hacer limón relleno casero
- Lava bien los limones, ya que usarás la parte amarilla de la corteza para aromatizar el helado. Ralla solo la parte amarilla de la corteza, evitando la parte blanca para no añadir un sabor amargo. Reserva la ralladura.
- Corta y exprime el limón del que acabas de rallar la piel. Hazlo sobre un colador para filtrar las pepitas y la pulpa, y reserva el jugo.
- En un bol, combina la leche condensada con el jugo de limón y la ralladura. Remueve con una lengua de repostería o varillas hasta obtener una crema espesa y bien integrada.
- En otro bol, bate la nata o crema de leche con las varillas eléctricas hasta que esté semimontada, es decir, hasta que comience a formar picos suaves.
- Añade entonces la crema de limón a la nata semimontada y mezcla suavemente con una lengua de repostería hasta que ambos componentes se integren completamente, logrando una textura cremosa.
- Vierte la mezcla en un recipiente apto para el congelador y alisa la superficie. Cubre con papel film o una tapa y lleva al congelador durante al menos 8 horas. Para obtener una textura óptima, déjalo en el congelador de un día para otro.
- Mientras se congela el helado, corta los limones restantes por la mitad a lo largo y vacíalos, conservando la pulpa para, por ejemplo, hacer una limonada casera. Coloca las cáscaras vacías en una bolsa zip y llévalas al congelador junto con el helado.
- Un par de horas antes de servir, saca el helado y las cáscaras del congelador. Rellena generosamente las cáscaras con el helado y vuelve a llevarlas al congelador hasta el momento de servir.
Limón helado de limón en Thermomix
- Lava bien los limones, ya que vas a utilizar la parte amarilla de su corteza para aromatizar tu helado. Con un pelador, retira la piel de uno de ellos sin llegar a la parte blanca y resérvala. Corta la parte superior de los limones que vas a rellenar y vacíalos con cuidado de no romper la cáscara. Puedes usar una cuchara o un sacabocados para extraer la pulpa.
- Coloca la mariposa en las cuchillas y vierte la nata en el vaso. Programa 2 minutos, velocidad 3 y medio, hasta que la nata quede montada. Retira la mariposa y reserva la nata en un bol.
- Sin lavar el vaso, pon la leche condensada, el jugo y la pulpa de los limones y la piel reservada. Programa 30 segundos, velocidad 5.
- Si quieres agregar las hojas de menta, pícalas muy pequeñas.
- Añade menta picada y la nata montada reservada y mezcla con la espátula mediante movimientos envolventes hasta obtener una crema homogénea.
El resto del procedimiento es el mismo que en la receta tradicional.
