Aunque en esta versión hemos seguido la receta tradicional de la lasaña boloñesa, reemplazando las capas de pasta por láminas de calabacín, existen diferentes variantes disponibles. Por ejemplo, la lasaña de calabacín y atún, la de pollo e incluso una menos convencional elaborada con jamón y queso.
Para preparar esta sabrosa lasaña, alterna capas de calabacín, salsa boloñesa y queso, finalizando con una fina capa de salsa bechamel, también conocida como salsa blanca en algunos países. Si prefieres una versión más ligera, puedes omitir la bechamel. Además, si buscas una opción sin gluten, simplemente sustituye la bechamel clásica por una bechamel sin gluten.
Ingredientes para 4 personas
- 1 calabacín
- 250g de carne picada (50% cerdo, 50% ternera)
- 1 cebolla
- 2 zanahorias
- 3 ramas de apio
- 2 dientes de ajo
- 500g de tomate triturado
- 300ml de vino tinto
- 4 lonchas de queso mozzarella
- 150g de queso mozzarella rallado
- Sal (al gusto)
- 1 cucharada de orégano
- 2 hojas de laurel
- Pimienta negra (al gusto)
- 1 cucharada de azúcar
- Aceite de oliva
Ingredientes para la bechamel
- 30g de mantequilla (sin sal)
- 300ml de leche entera
- 30g de harina de trigo
- 1/2 cucharada pequeña de sal
- 1/2 cucharada pequeña de pimienta negra molida
- 1/2 cucharada pequeña de nuez moscada molida (al gusto)
Cómo hacer lasaña de calabacín: la salsa de carne
- Pica la cebolla, los ajos y ralla la zanahoria. Corta el apio en trozos pequeños.
- En una olla a fuego medio con un poco de aceite de oliva, cocina la carne picada a fuego vivo hasta que esté dorada, aproximadamente 10 minutos. Remuévela durante el proceso para separarla. Es posible que se pegue al fondo de la olla, pero no te preocupes, se desprenderá al agregar la cebolla y dará sabor al guiso de carne.
- Baja el fuego, añade los ajos picados y remueve. Agrega la cebolla y cocina por 5 minutos o hasta que esté transparente.
- Añade el apio y continúa cocinando durante 5 minutos más. Luego, agrega la zanahoria, remueve y cocina durante 2 minutos.
- Agrega el vino tinto, aumenta el fuego y cocina durante 5 minutos o hasta que el alcohol se evapore por completo.
- Baja el fuego al mínimo y añade el azúcar, sal, pimienta, orégano, laurel. Remueve y cocina durante un par de minutos. Añade el tomate, tapa la olla y cocina a fuego bajo durante 25 minutos.
Cómo hacer la salsa bechamel para la lasaña de calabacín
- En una sartén a fuego bajo, derrite la mantequilla y luego añade la harina. Remueve durante unos minutos con unas varillas (batidor de mano) para formar una roux.
- Vierte poco a poco la leche caliente (previamente calentada para evitar grumos), mientras sigues removiendo la bechamel.
- Continúa removiendo con las varillas durante 5-8 minutos (dependiendo de la intensidad del fuego) o hasta obtener una textura semi espesa.
- Añade sal, pimienta y nuez moscada molida al gusto. Remueve nuevamente.
Montaje de la lasaña de calabacín y carne picada
- Corta láminas de calabacín de aproximadamente 3 mm de grosor. Puedes hacerlo con un cuchillo, aunque es más sencillo con una mandolina.
- Pincela la superficie del molde con aceite de oliva.
- Alterna capas de calabacín, salsa boloñesa y lonchas de queso hasta terminar con toda la salsa.
- Por último, cubre con la salsa bechamel y agrega queso rallado.
- Hornea utilizando la función de calor abajo en un horno precalentado a 180ºC (356º Fahrenheit) durante 35 minutos.
- Pasados esos 35 minutos, gratina durante 10 minutos más.
- Antes de servir, deja reposar la lasaña durante 15 minutos.
