Las gambas con gabardina son todo un clásico en los bares de tapas y son muy sencillas de elaborar. Y es que esta receta de gambas, camarones o langostinos son el mejor acompañamiento para una buena cerveza fría que unos deliciosos»caballitos».
Conviene freír las gambas por tandas, con mucho cuidado para que no se peguen unas a otras y nos quede un rebozado bonito, crujiente y uniforme. Hay muchas maneras de hacer gambas con gabardina, pero este rebozado queda muy crujiente y sabroso, lo mejor es hacer la masa para el rebozado con la cerveza bien fría.

Ingredientes
- 300gr de gambas
- Medio vaso de harina
- 1/3 de cerveza del tiempo
- Sal
- Aceite para freír
- una pizca de colorante
- un poco de levadura en polvo

- Pelamos las gambas, salvo el último anillo y cola.
- Ponemos la harina, la levadura, el colorante y una pizca de sal en un bol y añadimos, poco a poco, la cerveza, removiendo y batiendo con un tenedor hasta obtener una mezcla espesa.
- Calentamos abundante aceite en una sartén. Cuando esté bien caliente, tomamos cada gamba por la cola y la sumergimos en la mezcla de cerveza y harina, excepto la cola y la echamos a la sartén.
- Cuando la masa esté dorada, vamos sacando las gambas con gabardina sobre papel de cocina absorbente para retirarles el exceso de aceite.
