La Frikadellen o fricandela es una receta de cocina típica alemana y son hamburguesas caseras pensadas para tomar en caliente, acompañadas con unas patatas salteadas o patatas fritas, pero están estupendas en frío con una buena ensalada y pan.
Como suele pasar con las hamburguesas y las carnes en general, hay a quien les gustan muy hechas y a otros les gustan doradas por fuera y crudas por dentro, con lo cual mi recomendación es que, antes de hacerlas preguntéis cómo le gusta a cada comensal.
ingredientes para 4 personas
- 500gr de carne picada
- 1 trozo de pan del día anterior
- medio vaso de leche
- 2 cucharadas de perejil picado
- 1 cebolla mediana picada
- 1 diente de ajo picado
- 2 huevos
- 1 cucharadita de mostaza de Dijon
- Sal
- Pimienta negra
- 1 cucharadita de mejorana de frasco
- Aceite de oliva

- Trocea el pan y échalo en un bol con medio vaso de leche. Tápalo y déjalo en remojo durante 10 minutos.
- Calienta un poco de aceite en una sartén y echa la cebolla, el ajo y el perejil. Remuévelo todo durante 2 o 3 minutos, luego échalo en un bol grande y déjalo que se enfríe un poquito.
- Añade entonces la carne, los huevos, la mostaza y la mejorana. Salpiméntalo todo generosamente y amásalo con las manos.
- Escurre el pan y añádelo a la masa de carne.
- Amásalo todo otra vez hasta obtener una masa homogénea y de un tamaño uniforme.
- Calienta aceite en una sartén a fuego fuerte y fríe las fricandelas por ambos lados, al gusto de cada comensal.
