Independientemente de su procedencia, son una receta con carne picada versátil y deliciosa que se pueden preparar de diversas formas, ya sea rebozados, en salsa de la abuela o salsa de tomate.
Algunos famosos chefs españoles, como Arguiñano y Chicote, han presentado sus propias versiones de esta receta tradicional, con ingredientes y técnicas únicas. Incluso puedes prepararlos en Thermomix o cualquier otro robot de cocina para hacer el proceso aún más fácil. Y si quieres una opción más saludable, puedes cocinarlos al horno. Ingredientes
- 500g de carne picada (50% cerdo 50% ternera o res)
- 4 dientes de ajo
- perejil
- 1 huevo
- 100ml de leche
- 2 rebanadas de pan de molde
- 2 cucharadas pan rallado
- pimienta (al gusto)
- sal (al gusto)
- aceite de oliva
Cómo hacer filetes rusos
- Picas los ajos y los reservas.
- Picas el perejil.
- Troceas el pan, lo cubres con leche y lo dejas reposar.
- Pones la carne picada en un bol y añades los ajos picados, el perejil, sal al gusto, huevo, el pan que dejaste reposar con la leche (el cual debe estar bien escurrido), y el pan rallado. Amasas hasta conseguir mezclar bien todos los ingredientes.
- Luego, tapas el bol con papel film y lo llevas al refrigerador durante al menos 1 hora.
- Transcurrido este tiempo, continúas dándoles forma. Para ello, primero haces una bola y después la aplastas procurando que todos sean del mismo tamaño. Lo ideal es que no sean demasiado grandes, pero eso queda a tu elección.
- En este punto, ya podrías cocinarlos, aunque te recomiendo llevarlos 30 minutos más al refrigerador. De este modo, se compactarán y quedarán más jugosos por dentro. Si quieres congelarlos, este sería el momento idóneo.
- Pones una sartén a fuego medio y, cuando esté bien caliente, añades aceite de oliva y lo extiendes con ayuda de una brocha o pincel de cocina. Después, los cocinas durante 4 minutos por cada lado. Aunque el tiempo puede depender del punto en el que te guste la carne. Si quieres que queden muy hechos, mi recomendación es cocinarlos durante 6 minutos por cada lado a fuego moderado. Si, por el contrario, los quieres menos hechos, 3 minutos por cada lado serán suficientes.

- Utiliza una mezcla de carne picada de buena calidad, preferiblemente una combinación de carne de res y cerdo, ya que esto aportará jugosidad y sabor.
- Agrega ingredientes que ayuden a hacer tuya esta receta, como por ejemplo especias y condimentos de tu elección.
