Esta ensalada, que muchos hemos disfrutado en restaurantes chinos, combina ingredientes sencillos con una vinagreta agridulce que resalta su sabor adictivo. La vinagreta, fácil de preparar con pocos ingredientes, incluye vinagre de arroz, aunque el vinagre de manzana también es una opción. Uno de los ingredientes únicos de esta receta es el agar-agar, disponible en grandes supermercados o herbolarios.
El agar-agar, un gelificante y espesante obtenido de algas, se presenta en fibras blancas, como las utilizadas en esta receta, o en polvo. Es importante hidratar el agar-agar en agua tibia durante 2 horas para lograr la textura gelatinosa característica. ¡Anímate a probar esta ensalada asiática y descubre su irresistible combinación de sabores!
Ingredientes para 2 personas
- Media lechuga iceberg
- 4 g de agar-agar en fibras
- 50g de jamón cocido (en una loncha gruesa)
- 4 zanahoria
- 1 huevo
- aceite e girasol (para la tortilla)
Para el aliño de la ensalada china
- 20 g de aceite de girasol
- 50 g de vinagre de arroz
- 50 g de azúcar
- Sal
Ensalada china elaboración
- Inicia el proceso calentando una sartén a fuego alto. Añade un poco de aceite y distribúyelo uniformemente en la superficie de la sartén. Mientras se calienta, bate el huevo; puedes decidir si agregar sal según tu preferencia.
- Cuando la sartén alcance la temperatura adecuada, vierte el huevo batido y cocina hasta lograr una tortilla fina. Asegúrate de cocinarla por ambos lados. Posteriormente, saca la tortilla a un plato y córtala en tiras finas. Reserva para añadirla más adelante en la preparación de la ensalada china.
- Luego, hidrata en un bol con agua tibia el agar agar en fibras durante 2 horas para que obtenga su característica textura gelatinosa.
- Prepara la vinagreta agridulce mezclando vinagre de arroz y azúcar en un bol. Agrega aceite de girasol, una pizca de sal y mezcla hasta obtener una emulsión. Reserva la vinagreta.
- Cuando al agar agar le falten 10 minutos para estar listo, corta en bastoncitos de tamaño uniforme el jamón cocido y la zanahoria. También, corta en juliana media lechuga iceberg previamente lavada.
- Monta la ensalada colocando en el fondo de una fuente o plato hondo la lechuga y, sobre ella, distribuye el jamón, la zanahoria, el agar, las tiras de tortilla y el agar bien escurrido.
