Aprende cómo hacer leche evaporada casera con solo un ingrediente y de un modo muy sencillo. Hoy os muestro cómo hacer esta elaboración a petición popular, ya que sois muchos los que me la habéis pedido. Y es que aunque hay países donde conseguir leche evaporada es fácil en el supermercado, también hay otros en los que este producto no se comercializa..
Como su nombre indica la leche evaporada simplemente es una leche que pasa por un proceso de evaporación. Mediante este proceso se le retira aproximadamente el 60% de agua, con lo que se obtiene leche mucho más concentrada y de textura más espesa. Podéis encontrar multitud de recetas para elaborar leche evaporada, pero lo cierto es que la única válida es la que se hace «solo con leche». Para esta preparación no necesitamos mantequilla, ni leche en polvo ni ningún otro ingrediente.
Es importante no confundir leche evaporada con leche condensada, ya que son 2 productos distintos. Mientras que a la leche evaporada se le extrae únicamente agua concentrándola, a la leche condensada además de hacer el mismo proceso de evaporación le añadimos azúcar creando una mezcla por saturación.
La leche evaporada es un producto que se suele usar para elaborar salsas y todo tipo de recetas de repostería(bizcochos, magdalenas, etc…). Su uso también es muy común en postres elaborados con gelatina o grenetina como por ejemplo la gelatina rellena o flotatina y la gelatina mosaico.
¿Que necesitas para hacer 400ml de leche evaporada?
Tan solo vas a necesitar 1 litro(1000ml) de leche entera.
Cómo se debe preparar la leche evaporada
- Primero debemos poner la leche en una olla alta y de boca ancha. Esto es muy importante porque al hervir la leche no queremos que se salga, además de que nos será más fácil controlar todo el proceso.
- Seguidamente la pondremos a fuego vivo hasta que la leche comience a hervir. Durante el calentamiento iremos removiendo de vez en cuando para que la leche no se pegue al fondo de la olla.
- Cuando empiece a hervir debemos bajar el fuego al mínimo. En ese momento contaremos 60 minutos mientras se va cocinando. Es importante ir removiendo de vez en cuando durante todo el proceso. Se irá reduciendo la cantidad de leche debido a la evaporación del agua de la misma(60%) obteniéndose una concentración de nata y leche evaporada.
- Transcurrido este tiempo debemos colar el resultado para que así nos quede limpia y sin impurezas.
Podremos conservarla en un recipiente de cierre hermético durante 1 semana en la nevera
