Cómo conservar el queso. Que ricos los quesos, pero que complicado resulta en muchas ocasiones conservarlos adecuadamente. Sobre todo si tenemos gran variedad de queso o hemos comprado un trozo mayor del que vamos a consumir de inmediato. Y es que esto es más frecuente de lo que podéis llegar a imaginar porque el queso está muy presente en nuestras cocinas, al menos en la mía.
Cada queso necesita un determinado estado de conservación. No es lo mismo conservar un queso curado que un queso tierno. Pero en este post vamos a ver cómo conservar cualquier tipo de queso, para que en el momento que lo vayamos a consumir este como el primer día que lo compramos.
Cómo conservar el queso
El envoltorio y la transpiración
Olvidar todo lo que hasta ahora os parecía lógico a la hora de mantener el queso en buen estado. A priori puede parecer que envolver el queso en papel film es una buena idea, pero no es así. Esta mala costumbre comienza en muchas secciones de charcutería de algunos supermercados y la continuamos en casa. El queso necesita un envoltorio que permita que este transpire. Además, determinados tipos de queso absorben rápidamente sabores y olores, por lo que muchas veces terminan teniendo cierto sabor a plástico.
La mejor opción a la hora de conservar el queso es el papel encerado, porque aunque existen papeles específicos para la correcta conservación del queso, no siempre es posible adquirirlo. Pero no importa porque el papel encerado en el que toda la vida se ha envuelto la charcutería es perfecto para su conservación. Aunque debéis saber que en casa tenemos un papel que es perfecto para conservar el queso en óptimas condiciones hasta su consumo. Se trata del papel de horno.
Evitar la formación moho en el queso
Una de las cuestiones más comunes cuando nos preguntamos cómo conservar el queso en casa es evitar la formación del moho. Aunque con el envoltorio adecuado vamos a retrasar la aparición de las típicas manchas blancas o verdosas del queso, si lo tenemos durante mucho tiempo estas terminarán por aparecer. Eso no significa que tengamos que tirar el queso. Tan solo debemos raspar la zona afectada con un cuchillo y desechar la primera loncha. Una forma muy sencilla de evitar la aparición de humedades en el queso es untandolo con aceite de oliva o incluso conservarlo sumergido en este.
Conservando en general el queso en la nevera
Seguro que muchas veces os habéis preguntado cuál es el mejor lugar para conservar los quesos en nuestras neveras. El lugar idóneo para ello es el estante central, próximo a la puerta de la nevera, ya que esta zona es algo menos fría.
El queso rallado y su conservación
El queso rallado está presente en casi todas las neveras y es que resulta muy práctico tenerlo a mano. Pero comprar el queso ya rallado no es la mejor opción a la hora de conservarlo. Está muy bien si lo vamos a consumir en un breve periodo de tiempo. Aunque personalmente prefiero rallarlo en el momento de comerlo. Pero si soléis comprar este tipo de quesos la mejor manera de conservar el queso rallado es en una bolsa de cierre zip. Debemos sacarle todo el aire y consumirlo cuanto antes.
Para el queso tierno o fresco
Cuando os digo quesos tiernos o frescos me refiero a quesos tipo Burgos, ricota, requesón, feta, etc…Estos quesos siempre son los más delicados, pese a ello su conservación es muy sencilla. Si es posible lo ideal es mantenerlos en su envase original cubiertos por la salmuera con la que vienen este tipo de quesos. Si no es posible conservar el envoltorio original lo mejor es elegir un tarro de cristal y como en el caso anterior cubrirlo con la salmuera. Conservando los quesos curados
La mejor manera de conservar este tipo de quesos es un recipiente hermético, mucho mejor si este es de cristal. Aunque en el caso de este tipo de quesos lo mejor es comprar la cantidad justa que vayamos a consumir en el momento.
Sobre el queso de untar
La mejor opción cuando hablamos de la conservación de los quesos que vienen en tarrina siempre es usarlos cuanto antes para evitar la oxidación que sufren este tipo de quesos. En el caso de que la fecha de caducidad esté próxima siempre podemos congelarlo. Aunque debemos tener en cuenta que tras la congelación este queso ya no nos servirá para comerlo solo o untar tostadas. Ya que su estructura se ve alterada y se vuelve algo acuoso y granuloso. Pero lo podemos seguir utilizando para preparar cremas de verduras o postres en los que vayamos a triturar o mezclar ingredientes como por ejemplo un flan de queso.
