Aunque limpiar una calabaza puede parecer un desafío si no se tiene experiencia, seguir estos pasos que te detallo a continuación facilitará el proceso y garantizará que aproveches al máximo este delicioso ingrediente:
- Primero, coloca la calabaza bajo el grifo y frota bien toda la superficie para limpiarla a fondo. Debido a su piel dura, te recomiendo utilizar un pelador de patatas para quitarla. Asegúrate de repasar la misma área de 2 a 3 veces para eliminar completamente la capa superficial.
- Luego, es necesario retirar las semillas del interior. Para ello, corta la calabaza y utiliza una cuchara para raspar el interior, vaciándola por completo.
- Una vez que la calabaza esté limpia, córtala en dados de aproximadamente 2-3 cm. Guarda estos trozos en una bolsa hermética tipo «zip» (especial para congelar) para conservar su frescura y facilitar su uso posterior.
Es importante tener en cuenta que la calabaza está compuesta en un 90% de agua, lo que significa que, al descongelarla, es posible que adquiera una textura «acuosa y flácida», ya que habremos alterado las estructuras de la hortaliza. Congelar calabaza cocinada
Otra forma muy práctica de conservar la calabaza es congelarla ya cocinada, ya sea frita, horneada, en purés o hervida. De estas opciones, la calabaza asada ofrece los mejores resultados una vez descongelada, por lo que a continuación, os describiré el proceso para congelarla de manera efectiva:
- Partimos de la base de que ya tenemos nuestra calabaza troceada, ya sea en dados de 2-3 cm o en rodajas de no más de 3 cm.
- Colocamos los trozos en una bandeja de horno, previamente forrada con papel vegetal, y los aderezamos con un chorrito de aceite de oliva, asegurándonos de que queden bien cubiertos para potenciar su sabor.
- Horneamos la calabaza a 160 ºC (320 ºF) durante aproximadamente 60 minutos, o hasta que esté tierna y dorada.
- Una vez lista, la dejaremos enfriar antes de guardarla en bolsas zip, diseñadas especialmente para congelar alimentos.
- Como mencioné anteriormente, para descongelar la calabaza, simplemente la sacamos del congelador y la dejamos en la nevera hasta que se descongele por completo. Aunque este proceso puede tardar algunas horas, es el método que menos altera la estructura de la hortaliza.
