Atar o bridar carne es la acción de unir o sujetar un alimento con ligaduras o nudos para impedir que pierda su forma. Se utilizan los ya conocidos «hilos de cocina» que consisten en un cordel fino de cáñamo llamado bramante, aunque con la revolución de los nuevos materiales ahora también disponemos para bridar la carne de unas «bridas de cocina» que tan solo debemos de cerrar alrededor de nuestra pieza.
Técnicas para bridar carne

Estos método se utiliza en las recetas de carnes rellanas o mechadas para mantener el relleno en su interior y conservar la forma de la pieza. Un buen modelo que puede servirnos como ejemplo es este solomillo relleno
- Piezas con hueso: para bridar carnes como la pierna de cordero, primero se deshuesa sin abrir la pieza (debe quedar el hueco donde se alojaba el hueso, lo mejor es pedirle al carnicero que lo haga). El hueco se rellena con farsa a tu elección; para cerrar la parte del relleno se puede proceder como en el caso de las aves rellenas con la ayuda de los palillos entrecruzando el cordel; o bien se cose para evitar que se escurra el relleno. Algunos pasan el cordel o brida por el exterior de la pieza para recuperar su forma original.
- Piezas sin hueso: para bridar carnes en las piezas enteras o aquellas mechadas antes de proceder a su cocción se atan con el fin de mantener una forma uniforme y más presentable para llevar a la mesa. Se pasa un cordel o brida alrededor de la pieza y se hace un nudo desde uno de sus extremos dejando un hilo largo, dar una vuelta a unos 5cm de la anterior asar el extremo por dentro hasta tensar. Repetir el procedimiento hasta el final de la pieza.

Estos métodos para bridar carne son utilizados sobre todo en aves tanto con rellenos como sin ellos, te los expongo a continuación:
- Aves rellenas: Se cierra primeramente con palillos, separados entre si más o menos a un centímetro. Luego se coge el cordel o la brida y se entrelaza por los palillos cruzando el cordel entre uno y otro, al llegar al final se hace un nudo. Si te dispones a bridar carne con este metodo tan solo sustituye cordel por brida en el proceso.
- Aves sin relleno: Existen dos formas para bridar carne, te las expongo a continuación..
- (Primera forma) – Coger el ave sujetándola por las alas con el espinazo hacia arriba, pasar el cordel o la brida por el dorso de las alas y dar una vuelta al ave; pasar el cordel o brida a la altura de los muslos y situarse en el centro, donde está la pechuga. Sujetar las patas y el rabillo; hacer un moño y listo(si es una brida tan solo es cerrarla).
- (Segunda forma<) – Colocar el ave sobre la tabla con la pechuga hacia arriba, doblar el cordel en dos para encontrar su centro, cruzar el cordel por debajo del rabillo situando el centro del cordel bajo el rabo, cruzar nuevamente a la altura de las patas y atar, seguir por los costados del ave hasta llegar al cuello, doblar este y pasar el cordel por encima y por último pasar el cordel alrededor de las alas terminando con los dos extremos del cordel sobre el espinazo. Para bridar carne con este método tenemos que seguir los mismos pasos pero sustituyendo el cordel por la brida.
También existe un método más rápido y sencillo aún para «atar un ave» o «bridar carne». Para este sistema no se utilizará ningún tipo de cordel ni brida. Es el método más común que se utiliza en las pollerías para evitar que el ave pierda su forma y quede mejor presentado frente al consumidor. Se retuercen las alas y se colocan sobre la espalda, se juntan los muslos hacia el interior, acomodando los muñones de las patas en el orificio inferior por encima del rabillo. Aunque no quedará como los procedimientos anteriores, es una buena opción cuando no contamos con cordel.
