Cocinar pasta, falsos mitos sobre la pasta y errores que todos cometemos alguna vez. Hoy vamos a descubrir si algunas de las cosas que se dicen sobre la cómo cocinar pasta son ciertas. Aceite al agua de cocción ¿sí o no?. ¿La pasta esté al «dente» cuando se pega en la pared cerámica de la cocina? ¿Se debe agregar la pasta a la salsa y servir de inmediato? ¿No hay que tocar la pasta mientras se está cociendo? bla, bla, bla…
Seguro que estas son muchas de las preguntas que os hacéis cuando os disponéis a cocinar pasta. Y es que existen multitud de falsos mitos sobre la pasta. Con el tiempo cobran fuerza y al final no sabemos distinguir entre qué rumores son ciertos y cuales son falsos. Lo que nos lleva a cometer errores que se pueden solventar fácilmente.
Falsos mitos sobre cómo cocinar pasta
- ¿Hay que agregar aceite al cocinar la pasta? Esta es la gran pregunta y quizás una de las más controvertidas porque hay quien piensa que si es necesario y otros que para nada. También hay quien dice que si agregamos aceite al agua de cocción después, la pasta escurre la salsa y no permite que se impregne.
- ¿No hay que tocar la pasta mientras se cocina? Este es otro de esos errores que se cometen a menudo. Lo que ocurre es que si no tocamos la pasta en el momento de la cocción el almidón hace que se quede pegada. Sobre todo al principio. Pero la pasta hay que mimarla mientras se cocina y removerla de vez en cuando con delicadeza y sin perderla de vista.
¿Como acostumbras tu a cocinar pasta?
- ¿Se debe cocer la pasta con el agua justa? No solo no es cierto. Sino que además más adelante os mostraré uno de los motivos por los cuales debemos cocer la pasta en abundante agua. Los italianos, que son quienes más saben de pasta utiliza siempre agua en abundancia para cocer la pasta. Nuestro objetivo debe ser que la pasta nade en la olla, no importa si se trata de pasta fresca o pasta seca.
- ¿La pasta está en su punto cuando la lanzamos a la pared y se queda pegada? Si tiráis un espagueti a la pared cerámica de la cocina y se pega es que la pasta está muy pasada. Para cocer una pasta «al dente» tan solo hay que seguir las instrucciones del fabricante. Además tirar un espagueti contra la pared es un poco «guarro» ¿no?
- ¿Añadir la pasta a la salsa en su punto y remover? Otro de los falsos mitos sobre la pasta que además de no ser correcto puede arruinar un rico plato. Para que la pasta quede en su punto óptimo se debe añadir la pasta a la salsa un poquito antes de que esté al dente. Después mezclamos bien la salsa con la pasta y agregamos un poco del agua de cocción de la pasta. De este modo aprovechamos el almidón y la pasta queda en un punto de cocción perfecto.
