Existen muchas variantes para elaborar unos champiñones rellenos, por ejemplo carne picada, verduras o como en este caso de beacon, los propios champiñones y alguna cosilla mas que les da un toque muy especial.
Esta receta de champiñones rellenos es muy fácil de elaborar. Si quieres reducir un poco las calorías de la receta original puedes sustituir la nata por leche evaporada y prescindir del queso o usar queso bajo en grasa. Esta receta es ideal para servir con una ensalada ligera. Os recomiendo una ensalada de repollo.
Pueden ser un estupendo segundo plato, pero también se pueden servir como aperitivo a modo de canapé para un picoteo. Si vais a servirlos como aperitivo es importante no rellenarlos mucho para que sean mas cómodos a la hora de comer.
Ingredientes para 4 personas
- 16 champiñones grandes
- 80g jamón de York
- 80g beicon
- 1 cebolla pequeña
- 200ml nata para cocinar
- pimienta
- orégano
- 1 cucharadita de mostaza antigua
- parmesano rallado (opcional)
Champiñones rellenos elaboración
- Lavamos y vaciamos los champiñones. La mejor manera de sacarlos, es mover los tallos con cuidado hasta que salgan enteros. Reservamos los tallos para el sofrito del relleno.
- En una sartén ponemos a sofreír el bacon. Una vez esté doradito, añadimos la cebolla y la pochamos. Cuanto esta esté casi lista, ponemos los tallos de los champiñones muy picados y el jamón de york troceado.
- Sofreímos durante unos minutos. Cuando esté listo el sofrito añadimos la nata, un poquito de pimienta y lo dejamos que reduzca para que el relleno espese.
- Retiramos la mezcla del fuego y rellenamos con esta los champiñones.
- Una vez estén rellenos ponemos el queso rallado y el orégano por encima.
- Los metemos al horno precalentado previamente a 180ºC y gratinamos durante 10 minutos.
