El cachopo asturiano es uno de los platos más emblemáticos de la gastronomía tradicional asturiana. Este comparte fama con la fabada, las fabes con almejas, los tortos y los frisuelos o la tradicional receta de arroz con leche. Y no es de extrañar, ya que es un plato que conquista además de por su sabor lo hace también por su tamaño y por los distintos rellenos con los que se puede elaborar.
No se tienen datos de quien inventó este plato pero se sabe que se trata de una herencia de la cultura gastronómica francesa. La primera referencia escrita que se tiene del cachopo es del doctor Gaspar Casal a principios del siglo XVIII. En el libro «El libro de cocina» publicado por la gastrónoma Adela Garrido en 1938, el plato en cuestión aparece denominado como «filete a la asturiana».
Su aparición en escena se atribuye al cocinero asturiano Fernando Martín, quien en 1986 consiguió una estrella Michelin en su restaurante Trascorrales(Oviedo). El primer dato que se tiene de un cachopo en la restauración es en su restaurante «El Pelayo»(Oviedo). Donde se sirvió por primera vez lo que hoy conocemos como cachopo, este estaba relleno de espárragos, jamón y un frixuelo (crêpe).
Hay quien piensa que es una especie de San Jacobo gigante, algunos lo llegan a comparar con el cordon bleu. Pero esto es algo que no gusta en la zona y a los auténticos cachoperos (comedores de cachopos) les llega a molestar este tipo de comparaciones.
Los ingredientes son 2 filetes de ternera de gran tamaño, que en su versión más tradicional y purista se rellenan de jamón serrano y queso. Después se empanan en harina, huevo batido y pan rallado. Se fríen por ambos lados hasta obtener unos filetes rellenos crujientes por fuera y muy jugosos por dentro.
Aunque hay muchas variantes en los rellenos de estos, sin duda el más conocido y tradicional es el que lleva jamón serrano, queso ahumado asturiano y pimientos del piquillo. Aunque también los hay rellenos de espárragos, setas, foie, chosco, cecina, etc… Además también existen otras variaciones en cuanto al tipo de carne, encontrando incluso elaboraciones con pollo y pescado.
En Asturias(España) es un plato que podemos encontrar en la carta de casi cualquier restaurante. Estos compiten para ver quién hace el mejor. Para ello se tienen en cuenta 3 factores muy importantes: la calidad del conjunto, el tamaño de las piezas y la originalidad de sus rellenos.
Ingredientes para el cachopo de ternera
- 2 filetes «finos» de ternera asturiana(+/-300g)
- 3 pimientos del piquillo asados
- 3 lonchas de queso ahumado Central lechera asturiana
- 3 lonchas finas de jamón serrano
- harina (para empanar)
- 3 huevos talla M (para empanar)
- pan rallado grueso (para empanar)
- aceite de girasol (para freír)
Para la salsa de cabrales
- 100ml de nata para cocinar (opcional para la salsa)
- 60g de queso cabrales (opcional para la salsa)
Cómo hacer el cachopo asturiano perfecto
- Extiende los filetes sobre una tabla de cocina. Si lo deseas, puedes salarlos ligeramente (aunque yo no lo hago), pero sobre gustos no hay nada escrito. También debes comprobar que ambos filetes pueden solaparse teniendo el mismo tamaño y forma. Si ves diferencias de forma, recórtalos un poco, si por el contrario ves que tienen mucho grosor, entonces tendrás que aplastar un poco la carne con una espalmadera.
- Una vez tengas la carne preparada, coloca las lonchas de queso. Sobre estas, los pimientos del piquillo abiertos por la mitad. Finalmente, las lonchas de jamón serrano. Termina poniendo el otro filete de ternera encima y ajústalo con el de abajo para que coincidan.
- Presiona con los dedos los bordes laterales de la carne para sellar bien los dos filetes y evitar que se abran y se salga el relleno cuando los frías.
- Continúa batiendo los huevos. Dispón 3 recipientes, uno con el huevo batido, otro con harina y el último con pan rallado para el rebozado.
- Ahora pasalo por harina por ambas partes. Después, báñalo completamente en el huevo batido. Finalmente, pásalo por pan rallado. Deberás presionar suavemente el pan rallado por toda la superficie (especialmente por los laterales).
- Llévalo al frigorífico para que el rebozado se asiente. Resérvalo allí durante mínimo 1 hora.
- Transcurrido este tiempo, pon una sartén grande a fuego medio y agrega abundante aceite de girasol. Es muy importante que el aceite no esté demasiado caliente, pues podría tostarse rápidamente el empanado y quedarse crudos los filetes de ternera.
- Cuando el aceite esté caliente, fríelo por ambos lados hasta que se dore bien por ambos lados. Deberás darle la vuelta con cuidado. Cuando esté listo, sácalo sobre una rejilla para retirar el exceso de aceite y déjalo reposar 5 minutos antes de poder servirlo.
Cómo hacer salsa de cabrales para el cachopo asturiano
- Para elaborar la salsa de queso de Cabrales, primero, coloca nata en un cazo a fuego medio-bajo. Cuando esté ligeramente caliente, agrega el Cabrales. A continuación, remueve hasta que ambos ingredientes estén bien integrados.

Consejos para elaborar un cachopo jugoso
- Es muy importante que los filetes de ternera que usemos sean muy finos. Así será más sencillo cocinarlos y que no queden crudos. En caso que no tenga un corte fino habrá que espalmar para extender la carne.
- A menos que hagas un cachopín(cachopo pequeño) el tamaño de la sartén es muy importante. Debiendo hacerlo siempre en una sartén que tenga un diámetro de 30 o superior.
- Para evitar que al freírlos se desprenda el rebozado es imprescindible dejar reposar durante al menos una hora en la nevera. De este modo te aseguras un rebozado crujiente, sin roturas y uniforme.
- Es importante que el aceite que uses para freír sea de girasol(nunca de oliva) ya que necesitamos un aceite más neutro de sabor, esto te permitirá disfrutar de todos los matices que ofrece este plato tradicional asturiano.
- Una vez que lo tengas listo para degustar, hay que dejarlo reposar durante 5 minutos antes de trinchar.
Cómo servir y disfrutar de autentico cachopo de ternera
- La guarnición que se suele servir con este plato son unas patatas fritas caseras(no congeladas) y unos pimientos del piquillo asados, pero esto dependerá un poco del gusto personal de cada uno.
- Por último, tenéis que saber que dado el tamaño de estos, suelen ser un plato para compartir. Lo normal es compartirlo entre 2 comensales, aunque si tienes mucho apetito…
