La borscht o sopa roja es una receta típica de Rusia y Ucrania, de esta sopa existen multitud de versiones, en algunas de estas podemos ver cremas de verduras, en otra no lleva patata, otras se hacen con carne… en fin que las variantes son tantas que no es nada complicado llevar esta sopa al terreno de cada uno y que siga estando riquísima.
Nosotros hemos hecho nuestra borscht sin carne, pero si os apetece podéis ponerle cerdo o pollo. Para ello tan solo tenéis que sellar la carne al principio de la cocción de la sopa.
ingredientes para 4 personas
- 500gr de remolacha fresca
- 1 cebolla
- 1 patata
- 2 zanahorias
- 4 o 5 hojas de col blanca
- 1 puerro
- 2 ramas de apio
- Tomate concentrado
- Agua
- Aceite de oliva
- Sal
- Perejil
Cómo hacer sopa borscht
- Picamos finamente la cebolla y la rehogamos en una cazuela con un poco de aceite. Añadimos la remolacha y la patata cortadas en cuadraditos muy pequeños o como en nuestro caso y con ayuda de una mandolina en juliana. Cocínanos las verduras hasta que estén blandas, añadimos una cucharada sopera de tomate concentrado, cocinamos durante un minuto más y resérvalo todo.
- Cortamos las zanahorias del mismo modo que el resto de las verduras y cuécelas en una cazuela con abundante agua, cuando estén listas las sacamos y reservamos.
- En la misma agua de cocción de las zanahorias agregamos el puerro cortado en rodajas y la rama de apio entera. Incorporamos unas ramas de perejil. Sazonamos todo y déjanos cocer durante aproximadamente 15 minutos.
- Retiramos el apio, el puerro y el perejil. Volcamos las verduras que hemos rehogamos al principio en el caldo, cortamos la col lo más fina que sea posible y la añadimos. Cocemos todo a fuego medio durante 15 minutos más. Sirve en plato hondo y acompaña cada plato de borscht con una cucharada de crème fraïche o crema agria y un poco de perejil picado.
