Bizcocho marmolado esponjoso. Si os gusta probar distintas recetas de bizcochos para los desayunos semanales este os va a encantar. Se trata de un bizcocho de mármol que queda perfecto, alto y súper esponjoso. Os comento esto porque seguro que a muchos de vosotros os ha pasado algo similar a lo que me paso a mi cuando comencé a buscar una buena receta de este bizcocho.
Que recetas de bizcocho marmolado hay muchas, pero lo más habitual es que para comernos un trozo necesitemos un litro de agua o café, porque suelen quedar muy secos y no resultan nada apetecibles. Pues bien este no es el caso de este riquísimo bizcochuelo marmolado.
Antes de comenzar con la receta comentaros que podéis servir este bizcocho marmolado tal cual o con una cobertura de chocolate. Eso sí, antes de aplicarle la cobertura tener en cuenta que el bizcocho es contundente y que además es bastante grande. Con seguridad y dependiendo del tamaño de las porciones pueden salir entre 10 y 12 raciones. Dicho esto vamos con la receta del bizcocho marmolado.

- 250g de azúcar
- 15g de levadura química o polvo de hornear
- 250ml de leche
- 3 huevos Talla M
- 250ml de aceite de girasol
- 375g de harina trigo
- 1 cucharadita de extracto de vainilla
- 50g de cacao instantáneo (del que usamos para los desayunos)
Bizcocho marmolado elaboración
- Para comenzar a elaborar el bizcocho marmolado vamos a separar las claras de las yemas. Las depositamos en dos boles amplios. Reservamos las yemas y comenzamos montando las claras a punto de nieve. Una vez que monten vamos a añadir la mitad del azúcar y continuaremos batiendo hasta tener unas claras muy firmes. Reservamos.
- A continuación batiremos las yemas con el resto del azúcar hasta que la mezcla blanquee y duplique su volumen. Una vez que esto suceda agregamos la vainilla y batimos lo justo para integrar con el resto de ingredientes.
- En esta misma mezcla vamos a ir integrando poco a poco la harina tamizada junto con la sal y la levadura. Debemos agregar la harina en tandas pequeñas al tiempo que la integramos en la masa con ayuda de una espátula o lengua de cocina mediante movimientos suaves y envolventes. Continuaremos hasta tener toda la harina incorporada y una masa sin grumos.
- Una vez que tenemos una masa lisa y bien mezclada vamos a añadir las claras montadas muy poco a poco. Del mismo modo que hicimos con la harina debemos ir integrando despacio, con movimientos suaves y envolventes hasta tener una sola mezcla para el bizcocho marmolado.
- Llegados a este punto separamos la masa en dos boles procurando tener más o menos la misma cantidad de masa en ambos. Una de las porciones de masa la reservamos. A la otra le añadimos el cacao tamizado y mezclamos con una lengua de silicona hasta integrarlo por completo.
- Para poder desmoldar el bizcocho marmolado sin problemas vamos a engrasar y enharinar el molde. Para ello untamos el molde con mantequilla y espolvoreamos con harina procurando que llegue a todos los rincones del molde.
- A continuación vamos a ir alternando cucharadas de las dos masas para obtener el dibujo característico de este bizcocho. Es muy importante alternar bien los dos colores para que el resultado sea bonito.
- Cuando tengamos toda la masa en el molde horneamos a 180 grados centígrados con el horno previamente precalentado entre 35 y 40 minutos dependiendo del horno.
- Antes de sacarlo del horno pinchamos con una brocheta, si esta sale limpia podemos retirarlo. Por el contrario si sale con restos de masa hay que dejarlo en el horno durante unos minutos más.
- Finalmente dejamos enfriar por completo antes de desmoldar. Una vez que esté frío desmoldamos y ya podemos degustar nuestro riquísimo bizcocho marmolado.
