Ingredientes para el bizcocho de yogur
- 3 huevos talla L o 4 talla M
- 125g de yogur natural sin azúcar
- 230g de harina de repostería o 3 medidas con el vaso de yogur
- 230g de azúcar blanco o 2 medidas con el vaso de yogur
- 130ml de aceite de girasol o 1 medida con el vaso de yogur
- 8g de levadura de repostería o polvos de hornear
- ralladura de piel de un limón
Cómo hacer bizcocho de limón esponjoso
- Para comenzar a elaborar el bizcocho, pon los huevos y el azúcar en un bol. Luego, batirás con unas varillas eléctricas a máxima potencia entre 5 y 6 minutos o hasta que la mezcla duplique su volumen y comience a blanquear.
- Cuando tengas los huevos espumosos, agregarás la ralladura de la piel de un limón. Es importante agregar solo la parte amarilla de la piel, ya que la parte blanca amarga.
- A continuación, añadirás el yogur y el aceite. Batirás un minuto más, lo justo para integrar estos ingredientes con el resto. Desde este momento, ya no usarás más las varillas eléctricas.
- Una vez que tengas todos los ingredientes líquidos integrados, pasarás a los sólidos. Comenzarás con la levadura química o los polvos de hornear, que previamente habrás tamizado. Después harás lo mismo con la harina.
- Luego, con ayuda de una lengua de cocina o unas varillas manuales, integrarás la harina con el resto de la masa con movimientos suaves y envolventes. Es importante hacerlo así para que no se te baje la masa.
- Cuando tengas todos los ingredientes de la masa del bizcocho de yogur integrados, dejarás reposar la masa en la nevera durante 30 minutos. Esto es opcional, pero a mí me gusta darle un reposo a la masa porque me da la impresión de que la masa sube mejor y queda más esponjoso y tierno. Pero cuidado con el tiempo, no conviene pasarse, ya que corres el riesgo de que la masa pierda aire y no suba como debe.
- Mientras la masa reposa, forrarás la base del molde con papel de hornear. Luego pintarás las paredes del molde con un poco de aceite de girasol y las espolvorearás ligeramente con un poco de harina de trigo. De este modo resultará más sencillo desmoldar el bizcocho más tarde.
- A continuación, precalentarás el horno a 180 grados centígrados durante al menos 10 minutos. Mientras se calienta, pasarás la masa al molde. Puedes usar un molde de 22 cm de diámetro, pero si quieres un bizcocho más alto, te recomiendo usar un molde de menor tamaño.
