Ingredientes para 2 personas
- 600g de bacalao al punto de sal
- 4 pimientos choriceros
- 2 ajos
- 1 cebolla blanca
- 1 cebolla morada
- 1 rebanada de pan
- aceite
Cómo hacer bacalao a la vizcaína tradicional
- Comienzas retirando el pedúnculo a los pimientos y los pones a hidratar en abundante agua caliente. Los reservas mientras preparas el resto de los ingredientes.
- Cortas la cebolla blanca y la cebolla morada en juliana.
- Picas los ajos muy finos.
- Cortas la rebanada de pan por la mitad.
- Sacamos los pimientos choriceros del agua y los dejas escurrir sobre un colador. Después, con ayuda de un cuchillo y mucha paciencia, vas sacando la carne del interior del pimiento, descartando la piel que amargaría nuestra salsa.
- Pones una sartén a fuego medio y agregas un poco de aceite. Cuando esté caliente, doras el pan por ambos lados. Una vez que esté listo, lo sacas y lo reservas.
- En la misma sartén, pones el bacalao con la piel hacia abajo. Lo cocinas durante 2 minutos a fuego alto. Transcurrido este tiempo, lo sacas a un plato y lo reservas.
- En la misma sartén, agregas un poco más de aceite y añades las 2 cebollas. Las cocinas hasta que cambien de color. En ese momento, agregas los ajos, remueves y cocinas 1 minuto más. Pones la carne de los pimientos choriceros, remueves y continuas cocinando 2 minutos. Agregas un par de cazos del agua de hidratación de los pimientos y cocinas a fuego bajo hasta que esta reduzca.
- Pasas el sofrito al vaso de la batidora, añades el pan que reservaste cortado en trozos más pequeños y un poco más del agua (1/2 cacitos) que usaste para hidratar los pimientos. Trituras hasta conseguir una salsa fina y sin tropezones. Si crees necesario, puedes agregar agua hasta que la salsa esté en el punto que te guste.
- De nuevo pasas la salsa vizcaína a la sartén, pones el bacalao que reservaste y lo cocinas durante 8 minutos, procurando que la salsa cubra el pescado.
Consejos para lograr el bacalao a la vizcaína perfecto
- Buena Materia Prima: Obtén ingredientes de calidad, y si es posible, opta por productos vascos auténticos. Los pimientos choriceros, aunque no siempre fáciles de conseguir, marcan la diferencia en este plato.
