Cómo hacer almejas marinera. Este es un plato de tradición gallega, pero que se consume en toda España. De hecho es muy frecuente encontrarlo en cualquier bar de tapas, ya que son perfectas para acompañar una cerveza fría para ir abriendo boca a la hora del «tapeo».
Como todas las recetas tradicionales, de estas almejas a la marinera hay mil versiones distintas, pero todas tienen como base los mismos ingredientes, almejas, ajos, perejil, vino blanco y aceite. Partiendo de esta premisa podemos encontrar versiones a las que se les agrega distintos ingredientes como por ejemplo tomate, alguna especia o como en mi caso pimentón, que les da un toque muy especial. ¿Te animas a probarlas?.
Ingredientes para 4 personas
- 1kg de almejas
- 1 cebolla
- 2 dientes de ajo
- 1 hoja de laurel
- 1 poco de perejil
- 1 cucharada de pimentón dulce
- 1 cucharada de harina
- Medio vaso de aceite de oliva
- 1 vaso de vino blanco
Almejas marinera elaboración
- Para comenzar a elaborar las almejas a la marinera pon las almejas en una bol con abundante agua para que suelten la suciedad. Después enjuagarlas bien bajo del grifo moviéndolas un poco.
- Ahora pon en una olla el aceite y la cebolla muy picada. Añade los dientes de ajo y el perejil picado, el laurel, cocina hasta que la cebolla este transparente. Después agrega el pimentón y de inmediato añade la harina. Remueve sin parar y cocina durante un par de minutos.
- Continua incorporando las almejas y añade el vino blanco dejándolo hervir durante unos minutos para que el alcohol se evapore. Añade sal a tu gusto. Retiralas del fuego y déjalas un rato en reposo antes de servirlas.

Es muy importante que la salsa esté en su punto. Si ves que está demasiado líquida, disuelve una cucharadita de maicena en un poco de agua y agrégala, después deja que se cocina hasta que espese. Por el contrario si estuviera demasiado espesa, agrega un poco de agua.
